Melt 1/2 cup butter in a saucepan over medium heat.
Add 1/2 cup brown sugar and 1/2 cup honey to the melted butter. Whisk continuously until the mixture is combined and begins to bubble.
In a large red bowl, combine 4 cups rice crisps cereal, 1 cup graham cracker crumbs, and 1/2 teaspoon salt. Mix these dry ingredients thoroughly.
Pour the hot butter, sugar, and honey mixture over the dry ingredients in the red bowl. Stir until all ingredients are well combined and coated.
Line a baking sheet with parchment paper and spray lightly with cooking spray. Spread half of the granola mixture evenly across the prepared baking sheet.
Distribute one bag (approx. 10 oz) of mini marshmallows evenly over the granola layer on the baking sheet.
Place the baking sheet in a preheated oven (temperature not specified, but typically low heat, around 200°F or 95°C) for a few minutes, just until the marshmallows are slightly warm and soft, not fully melted.
Remove the baking sheet from the oven and gently spread the warmed marshmallows with a spatula to create an even layer.
Top the marshmallow layer with the remaining granola mixture, spreading it out evenly to cover the marshmallows.
Sprinkle one bag (approx. 12 oz) of chocolate chips over the top layer of granola. Gently press down on the entire mixture with your hands or a spatula to compact it.
Allow the granola bars to set for several hours at room temperature, or place them in the refrigerator for faster cooling and hardening. Once completely cooled and firm, use a knife to cut the large slab into individual granola bars of your desired size.
Wrap each granola bar individually in plastic wrap to keep them fresh and convenient for grab-and-go snacks. Store in an airtight container or freezer.
• For faster setting, place the bars in the refrigerator.
