Slice the Boleo roll lengthwise, but not all the way through. Toast the sliced roll on a dry pan until lightly golden brown, then set aside.
Spray a hot pan or griddle with cooking spray. Add the chopped onions and season with salt. Cover the onions and cook for 2-3 minutes, or until they are lightly caramelized and softened.
Add 3 ounces of thinly sliced deli roast beef to the cooked onions on the pan. Toss the beef and onions together, breaking up the beef as it cooks.
In a blender, add low-fat cottage cheese and blend until it is completely smooth and creamy.
Add a scoop (about 1/4 cup) of the blended cottage cheese to the beef and onion mixture on the pan and mix well. Place two slices of Yarlsberg Light Swiss cheese on top of the mixture. Cover the pan and allow the cheese to melt completely, creating a gooey topping.
Carefully scoop the hot beef, onion, and melted cheese mixture into the toasted Boleo roll. Serve immediately.
• Use thinly sliced deli roast beef for best results, as it cooks quickly and integrates well with the other ingredients.
• Blending cottage cheese until smooth creates a creamy, high-protein sauce that mimics the texture of traditional cheese sauces without the added fat.
• Caramelizing onions adds a sweet depth of flavor to the sandwich.
