Follow each step to make the recipe successfully.
In a bowl, combine salt, 2 tsp red chilli powder, 1 tsp coriander powder, ½ tsp turmeric powder, and 1 tsp garam masala. Add 1 tbsp besan, 2 tbsp corn starch, 2 tbsp rice flour, 1 tbsp ginger garlic paste, and a little water. everything together until you get a smooth, thick batter.
Add 500g cauliflower florets to the prepared batter. Mix well to ensure all florets are evenly coated. Heat oil in a deep pan and deep fry the coated cauliflower florets until they turn golden brown and crispy.
In a large wok or pan, heat 3 tbsp of oil. Add 1 tbsp chopped garlic and 2 chopped green chillies. for about until fragrant. Then, add 1 carrot and 1 sliced capsicum. Stir-fry on high heat for until the vegetables are slightly tender but still crunchy.
Add 3 cups of cooked rice (preferably cold) to the wok. Pour in 1 tbsp light soy sauce, 1 tbsp green chilli sauce, and 1 tbsp vinegar. Mix everything thoroughly, ensuring the rice is well combined with the vegetables and sauces.
Season the fried rice with salt to taste, 1 tsp crushed black pepper, and 1 tsp aromatic powder (if using). Mix again to distribute the seasonings evenly. Finally, add the crispy fried cauliflower florets to the rice and gently toss to combine.
Garnish the Gobi Fried Rice generously with chopped spring onions. Serve hot and enjoy your restaurant-style Gobi Fried Rice!
