Easy Chocolate Cake with Brigadeiro Topping

Ingredients

For the Chocolate Cake

  • 2 unitsWhole Eggs
  • 1 cupSugar
  • 1 cupChocolate Powder (or Nescau)
  • 2 cupsWheat Flour
  • 1 cupBoiling Water
  • 1 cupBoiling Oil
  • 1 tablespoonBaking Powder (Royal)

For the Brigadeiro Topping

  • 1 can/boxCondensed Milk
  • 3 tablespoonsNescau (or Chocolate Powder)
  • 1 tablespoonMargarine
  • as neededChocolate Sprinkles

Step-by-Step Instructions

  1. 1.Prepare the Cake Batter (Dry Ingredients)

    In a large bowl, combine 2 whole eggs, 1 cup of sugar, and 1 cup of chocolate powder (or Nescau). Mix these ingredients well with a wooden spoon until a uniform paste forms.

  2. 2.Add Wet Ingredients and Flour

    Add 2 cups of wheat flour to the mixture. Separately, boil 1 cup of water and 1 cup of oil together. Pour the hot water and oil mixture into the bowl with the other ingredients. Mix vigorously until the batter is smooth and dark, ensuring no flour lumps remain.

  3. 3.Add Baking Powder and Bake

    Stir in 1 tablespoon of baking powder until just combined. Pour the batter into a medium-sized baking pan (greased and floured). Place the pan in a preheated oven. Bake for 20 minutes at high heat, then reduce the heat and bake for another 10 minutes, or until a fork inserted into the center comes out clean.

  4. 4.Prepare the Brigadeiro Topping

    While the cake is baking, prepare the topping. In a saucepan, combine 1 can/box of condensed milk, 3 tablespoons of Nescau (or chocolate powder), and 1 full tablespoon of margarine. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture thickens and starts to detach from the bottom of the pan. This should take about 5-7 minutes.

  5. 5.Cut and Frost the Cake

    Once the cake is baked, remove it from the oven. While still hot, use a knife to cut the cake into desired square pieces directly in the pan. This allows the topping to seep into the cake. Pour the warm brigadeiro topping evenly over the entire cake.

  6. 6.Add Sprinkles and Serve

    Generously sprinkle chocolate sprinkles over the brigadeiro topping. Allow the cake to cool slightly before serving. Enjoy your moist and delicious chocolate cake!
