For Biryani Base

  • 1-2Star anise
  • 4-5Cloves
  • 2-3 large, slicedOnions
  • 2-3, slitGreen chilies
  • 2-3 medium, choppedTomatoes
  • 1 tsp or to tasteSalt
  • 1 tspTurmeric powder
  • 1-2 tbspBiryani masala/Red chili powder
  • 1 kg, cut into piecesChicken

For Layering and Finishing

  • 2 cups, cookedBasmati rice
  • 1/2 cup, choppedFresh coriander
  • 1/4 cupSaffron water (or yellow food color mixed with water)

Step-by-Step Instructions

  1. 1.Sauté Whole Spices

    Heat oil in a large pot. Add cinnamon sticks, green cardamom pods, bay leaves, star anise, and cloves. Sauté for about 30 seconds until fragrant.

  2. 2.Fry Onions

    Add sliced onions to the pot and fry until they turn golden brown, stirring occasionally. This may take about 8-10 minutes.

  3. 3.Add Green Chilies and Tomatoes

    Stir in the slit green chilies and chopped tomatoes. Cook until tomatoes soften and start to break down, about 3-4 minutes.

  4. 4.Season with Spices

    Add salt, turmeric powder, and biryani masala (or red chili powder) to the mixture. Mix well and cook for 1-2 minutes until the spices are fragrant and the oil starts to separate.

  5. 5.Cook Chicken

    Add the chicken pieces to the pot. Mix thoroughly with the masala, ensuring all chicken pieces are coated. Cover and cook until the chicken is tender and cooked through, about 15-20 minutes, stirring occasionally.

  6. 6.Add Cooked Rice

    Once the chicken is cooked, gently spread the pre-cooked basmati rice evenly over the chicken and masala layer in the pot.

  7. 7.Garnish and Steam

    Sprinkle chopped fresh coriander leaves over the rice. Pour saffron water (or yellow food color mixed with water) over the rice. Cover the pot tightly with a lid and cook on low heat for 15-20 minutes to allow the flavors to meld (dum cooking).

  8. 8.Serve Biryani

    Once cooked, gently fluff the biryani with a spoon, mixing the rice and chicken layers. Serve hot.
