In a large bowl, combine 1 cup wheat flour, 1/2 cup maida, 1 teaspoon sugar, and 1/2 teaspoon salt. Add 3 teaspoons of oil (or melted ghee) and mix well.
Gradually add water and mix the flour until it comes together to form a dough. the dough for at least until it is smooth and pliable.

Take two dough balls and flatten each one slightly with your fingers. Spread a thin layer of oil or melted ghee on one flattened dough ball and dust it lightly with maida. Place the second flattened dough ball directly on top and press them together gently.
Dust your rolling surface with a little flour. Place the paired dough on the surface and roll it out into a thin, round roti, similar to a regular chapati.
Heat a tawa (griddle) over medium heat. Once hot, place the rolled roti on the tawa. Cook for about until small bubbles appear on the surface. Flip the roti, drizzle some ghee or oil on top, and cook until golden brown spots appear. Flip again, drizzle more ghee/oil, and cook the other side until it also has golden brown spots and is fully cooked.
Remove the cooked Dosti Roti from the tawa and fold it in half. Repeat the process for the remaining dough. Serve hot with your favorite curry or side dish.
