Pour 700ml of water into a pot and bring it to a boil.
Once the water is boiling, add 200g of rice to the pot. Add 1 teaspoon of salt and stir well. Cook on low heat for 10-15 minutes, or until the water is absorbed and the rice is cooked.
Pour 1 liter of milk into the pot with the cooked rice. Add 100g of sugar and stir to combine.
Cook the mixture on medium heat for 10-15 minutes, stirring occasionally, to allow the kheer to thicken. Add 50g of raisins and continue to simmer until it reaches your desired consistency.
Once thickened, remove the kheer from heat. Serve warm or chilled, garnished with sliced almonds and chopped pistachios.
• Stir the rice and milk mixture frequently to prevent it from sticking to the bottom of the pot and burning.
• Adjust the amount of sugar according to your preference.
• For a richer and creamier kheer, use full-fat milk.
• Add a pinch of saffron for color and aroma.
• Include cardamom powder for a traditional flavor.
• Garnish with other nuts like cashews or walnuts.
