Follow each step to make the recipe successfully.
Pour 50 kg of chicken drumsticks into a large vessel. Add water to a large pot over fire and bring to a boil. Add the chicken drumsticks to the boiling water.
Grind fresh turmeric into a paste. Add the hand-ground turmeric paste and crystal salt to the chicken in the pot. Stir well and boil the chicken until it is fully cooked and tender.
Once the chicken is boiled, remove it from the pot and transfer it to a large tray to cool slightly. Carefully separate the meat from the bones, shredding the chicken meat into small pieces. Collect the bones separately.
Soak dried red chilies and then hand-grind them into a smooth paste. Separately, hand-grind coriander seeds, fennel seeds, and cumin seeds into another paste. Also, prepare hand-ground ginger and garlic paste.
Heat cold-pressed gingelly oil in a large brass pot over fire. Add all the whole spices (bay leaf, cinnamon stick, cardamom pods, cloves, star anise, fennel seeds) and until fragrant. Add the finely chopped onions and cook until they turn golden brown. Then, add the hand-ground ginger and garlic paste and until the raw smell disappears. Add the finely chopped tomatoes and cook until they soften.
Add the hand-ground chilli paste to the pot and mix well. Then, add the hand-ground coriander, fennel, and cumin paste. Season with crystal salt to taste and cook the masala until the oil separates. Add the boiled shredded chicken meat to the masala and mix thoroughly, ensuring the chicken is well coated. Finally, add the chopped coriander and mint leaves and cook until the filling is dry and well combined.
Take samosa sheets and place a portion of the chicken filling inside. Insert a chicken bone into the filling to create a drumstick-like appearance. Fold the samosa sheet into a triangular shape, ensuring the bone protrudes from one end. Seal the edges using maida paste.
Dip each assembled samosa into beaten egg wash, ensuring it's fully coated. Then, roll the samosa in breadcrumbs (or cornflakes crumbs) until it's evenly covered.
Heat cold-pressed gingelly oil in a large wok for deep frying. Carefully place the coated samosas into the hot oil. Fry in batches until they turn golden brown and crispy on all sides. Remove the fried samosas using a slotted spoon and place them on a tray to drain excess oil.
Once all the chicken samosas are fried, arrange them on a large platter. Serve the crispy, flavorful chicken samosas to your guests or community. The video shows them being served with rice and chicken curry to the residents of an old age home.
