All Ingredients - Main Ingredients

  1. Chicken (with bones, curry cut pieces) 1 kg
  2. Chopped Onion 5 medium
  3. Chopped Ginger 2 tsp
  4. Chopped Garlic 2 tsp
  5. Tomato Puree (from 4 medium tomatoes) 1 cup
  6. Oil 4 tbsp
  7. Water 1 cup

  3. Chilli Powder 1 tsp
  4. Curry Powder 2 tbsp
  5. Garam Masala 1 tbsp

    • 1 tbsp onion powder (per medium onion)
    • 3 tbsp dried minced onion
    • Shallots or leeks (1:1)

Step-by-Step Instructions

Step 1: Marinate the Chicken

In a bowl, add 1 kg curry cut chicken pieces. Add 1 tsp salt, 1/2 tsp turmeric, and 1 tsp chili powder. Mix well to coat the chicken evenly with the spices. Set aside to marinate for .

Step 2: Sauté Onions

Heat 4 tbsp of oil in a pan. Add 5 medium chopped onions and fry for on medium heat until they turn light brown.

Step 3: Add Ginger and Garlic

Add 2 tsp of chopped ginger and 2 tsp of chopped garlic to the pan. Fry for on medium heat until fragrant.

Step 4: Cook Marinated Chicken

Add the marinated chicken to the pan. Fry for on high heat, stirring constantly, then reduce heat to medium and fry for another .

Step 5: Add Curry Powder

Sprinkle 2 tbsp of curry powder over the chicken. Mix well and fry for on low heat.

Step 6: Incorporate Tomato Puree

Pour in the tomato puree (from 4 medium tomatoes) and mix thoroughly. Add 1/2 tsp salt to taste. Cook for on medium heat until the oil separates from the mixture.

Step 7: Add Garam Masala and Water

Add 1 tbsp of garam masala and cook for on low heat. Then, add 1 cup of water and mix well.

Step 8: Simmer to Finish

Cover the pan with a lid and cook for on low heat, allowing the chicken to cook through and the flavors to meld.
