Step-by-Step Instructions

Step 1: Prepare the Wet Ingredients

In the bowl of a stand mixer, combine the eggs, a pinch of salt, sour cream, and 50 ml of olive oil.

Step 2: Add Dry Ingredients

Sift the 500 g of flour and 10 g of baking powder directly into the mixer bowl with the wet ingredients.

Step 3: Mix the Dough

Start mixing the ingredients on a low speed. Once a thick dough begins to form, gradually add 80-100 ml of fresh milk, little by little, until a smooth, soft, and slightly sticky dough is achieved. Continue mixing until the dough is uniform and elastic.

Step 4: Shape the Dough

Transfer the prepared dough to a lightly oiled work surface. Briefly knead it by hand to form a smooth ball. Then, roll out the dough into a rectangular shape, approximately 7-8 mm thick.

Step 5: Cut the Mekici

Using a pizza cutter or a knife, cut the rolled dough into rhombuses or rectangles of your desired size. For a decorative touch, you can make a small slit in the middle of some of the dough pieces.

Step 6: Fry the Mekici

Heat a sufficient amount of oil for deep frying in a deep pot or pan over medium heat (level 5 out of 9 on an induction stove). Once the oil is hot, carefully place the cut dough pieces into the oil in batches. Fry until they are beautifully golden brown on both sides, turning as needed.

Step 7: Serve

Remove the fried mekici from the oil using a slotted spoon and place them on paper towels to drain any excess oil. Serve warm with your favorite toppings.
