  • 70gButter
  • 70gCaster Sugar
  • 1Egg
  • 70gSelf-raising Flour
  • ½ tspBaking Powder
  • ½ tspVanilla Extract

Step-by-Step Instructions

  1. 1.Measure Butter

    Measure out 70g of butter into a mixing bowl.

  2. 2.Add Sugar

    Add 70g of caster sugar to the butter in the bowl.

  3. 3.Cream Butter and Sugar

    Cream the butter and sugar together using a spoon or fork until well combined and light.

  4. 4.Add Vanilla Extract

    Add 1/2 teaspoon of vanilla extract to the mixture.

  5. 5.Add Baking Powder

    Add 1/2 teaspoon of baking powder to the mixture.

  6. 6.Add Milk

    Add 1 teaspoon of milk to the mixture.

  7. 7.Add Egg

    Crack 1 egg into the mixture.

  8. 8.Mix Wet Ingredients

    Mix all the wet ingredients together until well combined.

  9. 9.Mash Banana

    Peel and mash 1 ripe banana with a fork in a separate bowl.

  10. 10.Combine Banana with Mixture

    Add the mashed banana to the wet mixture and stir until incorporated.

  11. 11.Add Flour

    Add 70g of self-raising flour to the bowl.

  12. 12.Fold in Flour

    Gently fold the flour into the mixture until all ingredients are just combined. Do not overmix.

  13. 13.Prepare for Baking

    Pour the banana bread batter into a 400ml baking tin.

  14. 14.Bake

    Bake in a preheated oven at 180°C (fan) / 200°C / Gas Mark 4 for about 30 minutes, or until golden brown and a skewer inserted comes out clean.

    Remove the banana bread from the oven and let it cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
