Step-by-Step Instructions

  1. 1.Roast Garlic

    Heat 1 tablespoon of oil in a pan. Add 6-8 garlic cloves and roast them until lightly golden.

  2. 2.Add Dry Red Chillies

    Add 5-7 dry red chilies to the pan with the roasting garlic. Continue to roast until the chilies are fragrant and slightly darkened, about 1-2 minutes.

  3. 3.Remove Roasted Ingredients

    Once roasted, remove the garlic and dry red chilies from the pan and set them aside on a plate.

  4. 4.Cook Onions

    In the same pan with residual oil, add 1-2 medium sliced onions. Cook them over medium heat, stirring occasionally, until they turn golden brown and caramelized, about 3-5 minutes.

  5. 5.Remove Cooked Onions

    Transfer the browned onions from the pan to the plate with the roasted garlic and chilies.

  6. 6.Mash Garlic, Chilies, and Onions

    Using your hands, mash the roasted garlic, dry red chilies, and cooked onions together thoroughly until well combined and somewhat paste-like.

  7. 7.Cook Tomatoes

    Add 2 tablespoons of oil to the pan. Place 3 medium tomatoes, halved, cut-side down in the pan. Cover with a lid and cook for 3-4 minutes until the skin starts to blister and soften.

  8. 8.Peel and Flip Tomatoes

    Carefully remove the blistered skin from the tomatoes using tongs. Flip the tomatoes and cook for another 2-3 minutes until they are soft and slightly charred.

  9. 9.Mash Tomatoes

    Transfer the cooked tomatoes to a mortar and mash them gently with a pestle until they form a coarse pulp.

  10. 10.Season and Combine

    Add 1/2 teaspoon of salt and 1/2 teaspoon of cumin powder to the mashed tomatoes. Then, add the mashed garlic, chili, and onion mixture to the tomatoes.

    Mix all the ingredients thoroughly by hand until everything is well combined and forms a rustic bharta.

  12. 12.Serve with Rice
