Follow each step to make the recipe successfully.
Take 4 burger buns and separate them into top and bottom halves. Prepare a batter by mixing all-purpose flour, cornflour, red chilli powder, salt, and water (and optional red food coloring) until smooth. Crush Kurkure or cornflakes into a fine crumb.
Dip each half of the burger bun thoroughly into the prepared orange-red batter, ensuring it's fully coated. Immediately transfer the wet bun halves into the bowl of crushed Kurkure and coat them completely, pressing gently to adhere the crumbs.
Heat cooking oil in a deep pan or kadai for deep frying. Once the oil is hot, carefully place the coated bun halves into the oil and deep fry until they are golden brown and crispy on all sides. Remove and drain excess oil.
Cut paneer into thick slices or blocks. (Note: The video implies the paneer is already coated and fried, similar to the buns, before this step. If not pre-fried, coat paneer in the same batter and Kurkure, then deep fry until golden brown). Briefly dip the fried paneer in hot oil if needed to warm it up, then remove.
Place the fried paneer on a clean surface and chop it into small, bite-sized cubes. Transfer the chopped paneer to a mixing bowl. Add thinly sliced onions and shredded cabbage to the bowl.
Add white mayonnaise/coleslaw, cheese sauce, mint chutney (green sauce), chilli sauce/tandoori mayo (red sauce), and chaat masala/burger seasoning to the bowl with paneer and onions. Mix all ingredients thoroughly until well combined.
Take a fried bun half and carefully scoop out some of the soft inner bread to create a cavity. Spread white mayonnaise/coleslaw on the bottom half of the bun, then drizzle with cheese sauce. Spoon a generous amount of the prepared paneer filling onto the bottom bun. Place the other fried bun half on top to complete the burger.
Serve the Kurkure Paneer Burgers immediately while hot and crispy. Enjoy!
