Add 1 tablespoon of instant coffee to 1 cup of hot water. Mix well until the coffee dissolves. Set aside to cool.
Crack 3 eggs and separate the yolks into a bowl. Discard the egg whites (or save for another recipe). Add 3 tablespoons of sugar to the egg yolks and mix until combined.
Boil 3 cups of water in a saucepan. Place the bowl with the egg yolk and sugar mixture over the boiling water, ensuring the bottom of the bowl does not touch the water. Mix continuously until the sugar dissolves and the mixture thickens slightly. This process helps to cook the egg yolks gently.
Remove the bowl from the heat and let it cool down to room temperature, continuing to mix occasionally.
Add 250g of mascarpone cheese to the cooled egg yolk mixture. Mix with an electric mixer until the mixture is light and fluffy. Add 1 teaspoon of vanilla extract and mix again until well combined.
In a separate bowl, add 250ml of heavy cream. Beat the cream with an electric mixer for until stiff peaks form.
Gently fold the mascarpone and egg yolk mixture into the whipped heavy cream. Mix until fully incorporated and smooth.
Dip ladyfingers one by one into the cooled coffee mixture, ensuring they are soaked but not soggy. Arrange a single layer of soaked ladyfingers at the bottom of a rectangular dish.
Spread half of the prepared cream mixture evenly over the first layer of ladyfingers.
Dip more ladyfingers into the coffee mixture and arrange them in a second layer on top of the cream.
Spread the remaining cream mixture evenly over the second layer of ladyfingers.
Sift 2-3 tablespoons of cocoa powder generously over the top layer of cream.
Place the tiramisu in the refrigerator for at least to chill and set. For faster chilling, you can place it in the freezer for a shorter period, but do not allow it to freeze completely.
Once chilled, cut the tiramisu into individual pieces and serve. Enjoy!
• If you are vegetarian, you can omit the egg yolks.
