Follow each step to make the recipe successfully.
Heat 2 tbsp of refined oil in a pan. Add 1/2 tsp of cumin seeds and fry for until they splutter and become fragrant.
Add 1 tbsp of garlic to the pan and fry for to until it turns light golden.
Add 1/2 tsp of Kashmiri red chili powder and mix well into the oil and garlic. Immediately add 2 finely chopped onions and fry until they become soft and translucent.
Sprinkle a little salt (about 1/4 tsp) and mix, continuing to fry the onions until they are golden brown.
Add 1 tbsp of ginger and 2 chopped green chilies to the pan. Fry with the onions for about until aromatic.
Add 1/2 tsp cumin powder, 1/2 tsp coriander powder, and 1/4 tsp garam masala powder. Mix well to combine all the spices with the onion mixture.
Add 1/2 cup of finely chopped tomato and 1/2 cup of finely chopped capsicum. Mix everything nicely with the spices.
Add 1 cup of finely chopped spinach and mix thoroughly. Then add 1/2 tsp of turmeric powder and cook until all the vegetables are nicely cooked and softened.
Pour in around 1/2 cup of hot water and give it a good mix, allowing the mixture to and the flavors to meld. Add salt to taste and continue to cook until the vegetables are nicely boiled and the mixture thickens.
Add about 2 tbsp of chopped coriander leaves and mix them into the vegetable mixture. Mash the cooked vegetables with the spatula to create a semi-smooth consistency.
Add 2 tbsp of curd or yogurt and 1 tsp butter. Mix nicely until fully incorporated. Cook until the oil starts to separate from the mixture. Then, mix in 1 tsp of soya sauce.
Add the pre-soaked soya nuggets (1 cup dry, soaked in boiled salted water for , then drained and squeezed) to the masala. Cook the nuggets with the masala for , ensuring they are well coated.
Add around 1 cup of hot water and mix nicely. Allow the mixture to come to a boil. Add salt to taste (if needed) and cook for another , allowing the flavors to meld and the gravy to thicken slightly. Finally, mix in 1/2 tsp of garam masala powder for a final aromatic touch.
The Tawa nutri is now ready to serve. Serve hot with roti, paratha, naan, culcha, or rice.
