Step-by-Step Instructions

  1. 1.Roast the Semolina

    Pour 0.5 cup of semolina into a pan. Add 1 tablespoon of desi ghee and roast the semolina on low heat for 3-4 minutes, stirring continuously until it turns a light golden color. Remove from the pan and set aside.

  2. 2.Melt Ghee and Sugar

    In the same pan, add the remaining 1 tablespoon of desi ghee and let it melt. Once melted, add 1 cup of sugar (slightly less than a full cup). Stir continuously until the sugar melts and achieves a light golden color. Ensure it does not caramelize too much.

  3. 3.Cook the Carrots

    Add 0.5 kg of grated carrots (whose excess water has already been dried) to the melted sugar and ghee mixture. Stir well. The carrots will release more water, which will help melt any remaining sugar and cook the carrots.

  4. 4.Combine Ingredients

    Continue stirring the carrots until most of their water has evaporated. Then, add the roasted semolina and chopped almonds and walnuts to the pan. Mix all ingredients thoroughly until well combined and the color is vibrant.

  5. 5.Soften the Halwa

    Cover the pan and let it cook on low heat for 3-4 minutes. This step allows the semolina to soften further and absorb all the delicious flavors from the carrots and sugar.

  6. 6.Serve the Halwa

    Once cooked, the Suji and Gajar ka Halwa should be crumbly and flavorful. Transfer it to a serving plate and enjoy this delightful dessert.
