Place 3 eggs in a saucepan, cover with water, and cook for until hard-boiled. Set aside to cool.
Peel 3 potatoes and cut them into medium-sized pieces. Place them in a saucepan, cover with water, and add 1 teaspoon of salt. Cook until tender.
Cut 1 purple onion in half, then slice it thinly.
Heat ghee oil in a pan. Add the sliced onion and fry for until softened and slightly . Grate 1 carrot and add it to the pan with the onion. Fry for another until tender.
Drain the cooked potatoes and transfer them to a bowl. Mash them thoroughly until smooth.
Add the onion and carrot mixture to the mashed potatoes. Add 4 tablespoons of breadcrumbs. Crack 1 egg into a separate bowl, add 1 teaspoon of salt and freshly ground pepper, and well. Pour the egg into the potato mixture. Mix all ingredients thoroughly until well combined.
Peel the 3 hard-boiled eggs and finely them. Chop 3 stalks of fresh green onions. Combine the eggs and green onions in a bowl, then add 2 tablespoons of natural yogurt and mix well.
Take a small portion of the potato mixture and flatten it into a disc in your palm. Place a spoonful of the egg filling in the center. Carefully bring the edges of the potato mixture together to enclose the filling, forming a small ball or patty. Repeat with the remaining mixture.
Heat ghee oil in a flat pan. Place the potato patties in the pan and fry over low heat for on each side until golden brown and crispy.
In a small bowl, combine 3 tablespoons of sour cream, 1 tablespoon of whole grain mustard, and finely chopped fresh dill. Add salt to taste and mix well.
Serve the hot potato patties with the refreshing yogurt dill sauce.
