Ingredients

For the Potato Patties

  • 3Eggs
  • 3Potatoes
  • 1 tspSalt
  • 1Purple Onion
  • 1 tbspGhee Oil
  • 1Carrot
  • 4 tbspBreadcrumbs
  • 1Egg (for binding)
  • 1 tspSalt
  • to tasteFreshly Ground Pepper

For the Egg Filling

  • 3Hard-boiled Eggs
  • 3 stalksFresh Green Onions
  • 2 tbspNatural Yogurt

For the Yogurt Dill Sauce

  • 3 tbspSour Cream
  • 1 tbspWhole Grain Mustard
  • 1 small bunchFresh Dill
  • to tasteSalt

Step-by-Step Instructions

  1. 1.Boil Eggs

    Place 3 eggs in a saucepan, cover with water, and cook for 9-10 minutes until hard-boiled. Set aside to cool.

  2. 2.Prepare Potatoes

    Peel 3 potatoes and cut them into medium-sized pieces. Place them in a saucepan, cover with water, and add 1 teaspoon of salt. Cook until tender.

  3. 3.Chop Onion

    Cut 1 purple onion in half, then slice it thinly.

  4. 4.Sauté Onion and Carrot

    Heat ghee oil in a pan. Add the sliced onion and fry for 3-4 minutes until softened and slightly caramelized. Grate 1 carrot and add it to the pan with the onion. Fry for another 2-3 minutes until tender.

  5. 5.Mash Potatoes

    Drain the cooked potatoes and transfer them to a bowl. Mash them thoroughly until smooth.

  6. 6.Prepare Potato Mixture

    Add the sautéed onion and carrot mixture to the mashed potatoes. Add 4 tablespoons of breadcrumbs. Crack 1 egg into a separate bowl, add 1 teaspoon of salt and freshly ground pepper, and whisk well. Pour the whisked egg into the potato mixture. Mix all ingredients thoroughly until well combined.

  7. 7.Prepare Egg Filling

    Peel the 3 hard-boiled eggs and finely dice them. Chop 3 stalks of fresh green onions. Combine the diced eggs and green onions in a bowl, then add 2 tablespoons of natural yogurt and mix well.

  8. 8.Form and Fill Patties

    Take a small portion of the potato mixture and flatten it into a disc in your palm. Place a spoonful of the egg filling in the center. Carefully bring the edges of the potato mixture together to enclose the filling, forming a small ball or patty. Repeat with the remaining mixture.

    Heat ghee oil in a flat pan. Place the potato patties in the pan and fry over low heat for 5-6 minutes on each side until golden brown and crispy.

  10. 10.Prepare Yogurt Dill Sauce

    In a small bowl, combine 3 tablespoons of sour cream, 1 tablespoon of whole grain mustard, and finely chopped fresh dill. Add salt to taste and mix well.
