  • 3-4Garlic cloves

  • 0.5 tspAsafoetida powder

Step-by-Step Instructions

  1. 1.Prepare Potatoes

    Peel and cut the 300g potatoes into wedges or slices. Transfer them to a bowl.

  2. 2.Prepare Garlic

    Slice 3-4 cloves of garlic.

  3. 3.Prepare Onion

    Slice 1 large red onion.

  4. 4.Temper Spices

    Heat 3-4 tablespoons of coconut oil (or other oil) in a pan. Add 0.5 teaspoon of mustard seeds and wait until they start to pop.

  5. 5.Sauté Garlic and Potatoes

    Add the sliced garlic to the pan and sauté until lightly golden. Then, add the cut potatoes.

  6. 6.Add Asafoetida and Salt

    Sprinkle 0.5 teaspoon of asafoetida powder (optional) over the potatoes. Add salt to taste and mix everything well. Cook the potatoes until they are slightly soft.

  7. 7.Add Ground Spices

    Add 0.5 teaspoon of cumin powder, 0.5 teaspoon of coriander powder, and some turmeric powder. Then, add 0.5 tablespoon of chili powder. Mix thoroughly until all the potatoes are well coated with the spices and the spices are fragrant.

  8. 8.Cook Potatoes to Tenderness

    If the potatoes are not yet fully cooked, add 0.5 cup of water. Continue to cook, stirring occasionally, until the water evaporates and the potatoes are tender.

  9. 9.Add Onion and Curry Leaves

    Once the potatoes are tender, add the sliced red onion and mix well. Cook for a short period until the onions are slightly softened but still retain some crunch. Finally, add 1 sprig of curry leaves and mix.

  10. 10.Garnish and Serve

    Remove the pan from the heat. Garnish with chopped coriander and serve hot.
