Add water to a pressure cooker. Add salt and 1/4 teaspoon of turmeric powder. Then add 500 grams of mutton pieces. Pressure cook the mutton for about until the pieces are nice and tender.
Take a small pan and add a little oil. Add 1 teaspoon of whole pepper corns, 1 teaspoon of cumin seeds, 1 teaspoon of fennel seeds, 2 pieces of cinnamon, and 10 cloves. Roast these spices for about a minute. Then, add 6 red chilies, 5-6 garlic cloves, and a piece of ginger (cut up). Continue to roast for another minute until fragrant, then turn off the stove.
Allow the roasted spice mixture to cool down. Transfer the cooled spices to a grinder. Add a little water and grind it into a nice, fine masala paste.
Take a wide saucepan and add 2 tablespoons of ghee. Add 3 medium-sized sliced onions and 2 finely chopped green chilies. Sauté the onions until they are nice and brown.
Once the onions are browned, add the grounded masala paste to the pan and mix well. Then, add 3 medium-sized finely chopped tomatoes and sauté the mixture, allowing the tomatoes to cook down.
Transfer the cooked mutton pieces along with their stock into the saucepan with the masala mixture. Season it with some salt to taste and mix everything thoroughly.
Cook the mutton and masala mixture for about , allowing the masala to blend into the mutton and the gravy to thicken slightly. Garnish with some finely chopped coriander leaves. Turn off the stove.
Serve the delicious South Indian style Spicy Mutton Masala hot with some nice hot steaming rice.
