Follow each step to make the recipe successfully.
Crumble the homemade paneer into a bowl. Add chopped green chilies, 1 tsp salt, 1 tsp dry coriander powder, 1/2 tsp black pepper, 1/2 tsp amchur, a pinch of chili flakes (optional), 1/2 tsp garam masala, 1 tsp crushed kasuri methi, 2 tbsp fresh coriander, and 1/2 tsp hot sauce (optional). Mix all ingredients thoroughly until well combined.
Take 10-12 small pearl onions. Make two cross cuts on the top of each onion, ensuring not to cut all the way through. Boil the onions in water for until slightly tender. Immediately transfer the boiled onions to cold water to stop the cooking process. Carefully separate the layers of the onions.
Take each separated onion layer and generously stuff it with the prepared paneer mixture. Gently roll the stuffed onion layer to secure the filling. Repeat with all onion layers.
Heat 2 tablespoons of butter and 1 tablespoon of oil in a cast iron pan over medium heat. Once the butter is melted and bubbling, carefully place the stuffed onions in the pan. Shallow fry them, turning occasionally, until they are lightly golden brown on all sides. Add 2-3 slit green chilies to the pan during the last few minutes of frying for added flavor.
In a separate pot, heat 1 tablespoon of ghee. Add the crushed ginger and garlic. until fragrant, about . Add 1 tsp turmeric powder and 1 tsp dry coriander powder. Mix well. Then, add 2 crushed tomatoes and 1/2 tsp salt. Cook for until the tomatoes soften and the oil starts to separate.
In a grinder, combine 1/4 cup roasted cashews and 1 tablespoon roasted poppy seeds. Grind them into a coarse powder. Add 2 tablespoons plain yogurt and 4 tablespoons milk to the grinder. Blend until a smooth, creamy paste is formed.
Add the prepared cashew-poppy seed paste to the tomato gravy base. Mix thoroughly. Add a little water to adjust the gravy to your desired consistency. Stir in 1/2 tsp red chili powder, 1 tbsp crushed kasuri methi, 1 tsp garam masala, and 2 tbsp fresh coriander. Cook for another , allowing the flavors to meld.
Pour the hot, creamy gravy directly over the shallow-fried stuffed onions in the cast iron pan. The dish will sizzle beautifully. Garnish with extra fresh coriander if desired. Serve immediately while hot, directly from the pan.
