  1. Prepare Rice Vermicelli

    Rinse the 200g of rice vermicelli under running water, then soak it in water for to soften. Set aside.

  2. Fry Anchovies

    Heat cooking oil in a pan. Add 1/2 cup of cleaned anchovies and fry until they turn golden brown and crispy. Push the fried anchovies to one side of the pan.

  3. Sauté Spices and Onions

    Add 1 teaspoon of mixed spices or mustard seeds to the oil with the anchovies and fry until fragrant. Then, add 2 large sliced onions and until they become translucent, stirring occasionally.

  4. Add Chilies and Curry Leaves

    Add 10 dried chilies and 2 sprigs of curry leaves to the pan. for another until the curry leaves are fragrant and the chilies are slightly .

  5. Combine with Vermicelli

    Add the soaked rice vermicelli (without the soaking water) to the pan. Mix well with the ingredients using low heat, ensuring everything is evenly distributed.

  6. Season and Cook

    Sprinkle salt to taste over the vermicelli and mix thoroughly. Pour approximately 1/2 cup of water into the pan and continue to cook, stirring gently, until the noodles are soft and the water has been absorbed. Ensure the noodles are fully cooked and tender.

  7. Serve

    Once the rice vermicelli is soft and well-mixed, it is ready to be served hot.
