Heat 50ml of oil in a pan. Add 1 chopped onion and cook for 4-5 minutes on medium heat until softened and lightly golden.
Add 1 tsp of garlic paste and 1 tsp of ginger paste to the pan. Sauté for 1-2 minutes until the raw smell disappears.
Add 2 chopped tomatoes and cook for 3-4 minutes on medium heat until they become soft and mushy.
Add 1 tsp chilli powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp salt, and 1 chopped green chilli. Mix well and cook the spices for 2-3 minutes.
Pour in 50ml of water, stir, and cook the masala for another 3-4 minutes until the oil begins to separate from the mixture.
Add 1kg of chopped turnips to the pan. Mix thoroughly to coat them with the masala. Cover the pan with a lid and cook for 30 minutes on low-medium heat, allowing the turnips to become tender.
Once the turnips are fully cooked and soft, use the back of your spoon to mash them in the pan to your desired consistency.
Sprinkle fresh chopped coriander over the mashed turnips and mix it in. Serve hot.
