  4. Ginger Paste 1 tsp
  5. Tomatoes 2
  6. Chilli Powder 1 tsp
  7. Turmeric Powder 1 tsp
  8. Cumin Powder 1 tsp
  9. Salt 1 tsp
  10. Green Chillies 1
  11. Water 50ml
  12. Turnips (Shalgam) 1kg
  13. Coriander a handful, for garnish

    • 1 tbsp onion powder (per medium onion)
    • 3 tbsp dried minced onion
    • Shallots or leeks (1:1)
  • No Garlic (fresh)?

    • 1/4 tsp garlic powder (per clove)
    • 1/2 tsp garlic granules (per clove)

Step-by-Step Instructions

Step 1: Sauté Onions

Heat 50ml of oil in a pan. Add 1 chopped onion and cook for on medium heat until softened and lightly golden.

Step 2: Cook Aromatics

Add 1 tsp of garlic paste and 1 tsp of ginger paste to the pan. Sauté for until the raw smell disappears.

Step 3: Cook Tomatoes

Add 2 chopped tomatoes and cook for on medium heat until they become soft and mushy.

Step 4: Add Spices

Add 1 tsp chilli powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp salt, and 1 chopped green chilli. Mix well and cook the spices for .

Step 5: Prepare the Masala

Pour in 50ml of water, stir, and cook the masala for another until the oil begins to separate from the mixture.

Step 6: Cook the Turnips

Add 1kg of chopped turnips to the pan. Mix thoroughly to coat them with the masala. Cover the pan with a lid and cook for on low-medium heat, allowing the turnips to become tender.

Step 7: Mash the Turnips

Once the turnips are fully cooked and soft, use the back of your spoon to mash them in the pan to your desired consistency.

Step 8: Garnish and Serve

Sprinkle fresh chopped coriander over the mashed turnips and mix it in. Serve hot.
