  • 150 grCrescenza (or Stracchino) cheese
  • 120 grSpeck slices
  • 30 grGrated Grana Padano (or Parmesan)
  • q.b.Breadcrumbs
  • q.b.Salt
  • q.b.Pepper

Step-by-Step Instructions

  1. 1.Prepare the potatoes

    Peel the potatoes and then grate them using a grater with large holes. Place the grated potatoes in a bowl.

  2. 2.Mix the potato filling

    To the grated potatoes, add salt, pepper, 30g of grated Grana Padano (or Parmesan), and 150g of Crescenza (or Stracchino) cheese. Mix all ingredients thoroughly until well combined.

  3. 3.Prepare the puff pastry

    Unroll the rectangular puff pastry onto a baking sheet lined with parchment paper. Prick the entire surface of the pastry with a fork.

  4. 4.Add the speck

    Arrange the 120g of speck slices over the puff pastry, slightly overlapping them. Leave a border of about 1-2 cm around the edges of the pastry.

  5. 5.Add the potato mixture

    Evenly distribute the potato and cheese mixture over the speck, ensuring it covers the entire speck layer while still leaving the pastry border exposed.

  6. 6.Sprinkle with breadcrumbs and form the crust

    Sprinkle breadcrumbs generously over the potato mixture. Then, fold the exposed edges of the puff pastry inwards to create a decorative crust around the tart.

  7. 7.Bake the tart

    Place the baking sheet with the tart into a preheated fan oven at 200°C. Bake for 20 minutes, or until the pastry is golden brown and the filling is cooked through.

  8. 8.Serve

    Once baked, remove the schiacciata from the oven. Let it cool slightly before slicing and serving. It can be enjoyed warm or at room temperature.
