Peel the potatoes and then grate them using a grater with large holes. Place the grated potatoes in a bowl.
To the grated potatoes, add salt, pepper, 30g of grated Grana Padano (or Parmesan), and 150g of Crescenza (or Stracchino) cheese. Mix all ingredients thoroughly until well combined.
Unroll the rectangular puff pastry onto a baking sheet lined with parchment paper. Prick the entire surface of the pastry with a fork.
Arrange the 120g of speck slices over the puff pastry, slightly overlapping them. Leave a border of about 1-2 cm around the edges of the pastry.
Evenly distribute the potato and cheese mixture over the speck, ensuring it covers the entire speck layer while still leaving the pastry border exposed.
Sprinkle breadcrumbs generously over the potato mixture. Then, fold the exposed edges of the puff pastry inwards to create a decorative crust around the tart.
Place the baking sheet with the tart into a preheated fan oven at 200°C (approximately 390°F). Bake for , or until the pastry is golden brown and the filling is cooked through.
Once baked, remove the schiacciata from the oven. Let it cool slightly before slicing and serving. It can be enjoyed warm or at room temperature.
