Creamy Seviyan Kheer

Ingredients

Main Ingredients

  • 1 tablespoonGhee
  • 1/4 cupMixed Nuts (Almonds, Cashews, Raisins)
  • 1 cupVermicelli (Seviyan)
  • 3 cups (750ml)Milk
  • 1/2 cupSugar
  • 1/4 teaspoonGreen Cardamom Powder

Step-by-Step Instructions

  1. 1.Fry Nuts

Heat 1 tablespoon of ghee in a pan. Add 1/4 cup of mixed nuts (almonds, cashews, and raisins) and fry until they turn golden brown. Remove the fried nuts and set them aside.

  2. 2.Roast Vermicelli

In the same pan, add 1 cup of vermicelli (seviyan). Roast on medium heat, stirring continuously, until the vermicelli turns golden brown, which should take about 2-3 minutes.

  3. 3.Add Milk and Boil

Pour 3 cups (750ml) of milk into the pan with the roasted vermicelli. Bring the mixture to a boil, stirring occasionally to prevent the vermicelli from sticking to the bottom.

  4. 4.Add Sugar and Cardamom

Once the milk starts boiling, add 1/2 cup of sugar and 1/4 teaspoon of green cardamom powder. Stir well to dissolve the sugar and combine all ingredients.

  5. 5.Simmer and Thicken

Reduce the heat to low and let the kheer simmer for 5-7 minutes. Continue stirring frequently until the vermicelli is fully cooked and the kheer thickens to your desired creamy consistency.

  6. 6.Serve and Garnish

Pour the creamy seviyan kheer into a serving bowl. Garnish generously with the previously fried nuts and raisins. Serve warm or chilled.
