Step-by-Step Instructions

  1. 1.Heat Oil and Temper Spices

Heat 2-3 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and 2-3 dry red chili peppers. Allow the cumin seeds to crackle, which usually takes about 15-20 seconds.

  2. 2.Sauté Garlic and Onion

Add 2-3 chopped garlic cloves to the pan and brown them lightly for about 30 seconds. Then, add 1 medium sliced onion and cook for 2-3 minutes until it becomes translucent and slightly golden.

  3. 3.Add Powdered Spices

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of chili powder to the pan. Mix well with the onions and garlic, cooking for about 30 seconds until fragrant.

  4. 4.Cook Potatoes

Add 2 medium diced potatoes to the pan and mix thoroughly with the spices. Add 1 teaspoon of salt and mix again. Cover the pan with a lid and cook for 1 minute. Repeat this process a few times, stirring occasionally, until the potatoes are tender and slightly browned, which should take about 10-15 minutes.

  5. 5.Add Spinach

Once the potatoes are cooked, add 4-5 cups of chopped spinach to the pan. Mix well with the potatoes and spices. Cover the pan with a lid and cook for a couple of minutes until the spinach wilts.

  6. 6.Finish and Serve

Remove the lid, add 1 tablespoon of lime juice, and mix everything well. Serve the Aloo Palak hot with fresh rotis and a side salad.
