  • 2 tablespoonsCooking Oil

Seasonings

  • 1 tablespoonGarlic (crushed)
  • 4 stemsShallots (green onions)
  • 1Wiri-wiri Pepper
  • 1 teaspoonSalt
  • 0.5Onion

Step-by-Step Instructions

  1. 1.Gather and Prepare Ingredients

  2. 2.Wash and Cut the Poi Bhaji

  3. 3.Chop Other Seasonings

Chop half an onion, four stems of shallots, and one wiri-wiri pepper.

  4. 4.Heat Oil and Sauté Aromatics

Heat 2 tablespoons of cooking oil in a karahi (or pot) on medium heat. Add the chopped onion, shallots, wiri-wiri pepper, and 1 tablespoon of crushed garlic. Sauté for about 1.5 to 2 minutes until fragrant and slightly softened.

  5. 5.Add Poi Bhaji and Salt

Add the chopped Poi Bhaji to the pot. Sprinkle 1 teaspoon of salt over the bhaji. Stir well to combine all ingredients.

  6. 6.Cook Covered (First Phase)

Cover the pot and let the bhaji cook for about 2 minutes. The bhaji will shrink significantly as it cooks.

  7. 7.Stir and Continue Cooking

After 2 minutes, uncover and stir the bhaji. It will have released some liquid and reduced in volume. Cover again and cook for another 2-3 minutes.

  8. 8.Final Check and Serve

Uncover the pot. The bhaji should be fully cooked and tender. Taste and adjust salt if necessary. Serve hot.
