Step-by-Step Instructions

  1. 1.Sauté Garlic and Onions

    Heat oil in a pan. Add finely chopped garlic and sauté until fragrant, about 30-60 seconds. Then, add finely chopped onions and sauté until they turn soft and slightly golden, approximately 3-4 minutes.

  2. 2.Cook Tomatoes and Chilies

    Add chopped green chilies, diced tomato, and a little salt to the pan. Mix well. Cover the pan with a lid and cook for 2 minutes until the tomatoes become soft and mushy.

  3. 3.Add Spices

    Uncover the pan. Add coriander powder, red chili powder, and turmeric powder to the mixture. Mix all the spices thoroughly with the sautéed vegetables, cooking for about 1-2 minutes until the raw smell of spices disappears.

  4. 4.Incorporate Gram Flour

    Add 1 tablespoon of gram flour (besan) to the pan. Sauté it nicely with the vegetable and spice mixture for about 1-2 minutes until it is well roasted and fragrant. This step enhances the taste and texture of the bhurji.

  5. 5.Add Paneer and Coriander

    Add the crumbled paneer and fresh chopped coriander to the pan. Gently mix everything together, ensuring the paneer is evenly coated with the spices and vegetables.

  6. 6.Finish with Garam Masala

    Finally, sprinkle some garam masala over the paneer mixture. Cover the pan and cook for another 2 minutes on low heat so that all the flavors blend perfectly.
