Cut the chicken breast into bite-sized pieces. Season with salt, black pepper, and a drizzle of olive oil. Mix well to coat the chicken evenly.
Place the seasoned chicken pieces in the air fryer basket. Air fry at 392°F (approximately 200°C) / 200°C (approximately 390°F) for , or until cooked through and lightly browned.
While the chicken cooks, the onion, carrot, and red bell pepper. Slice and then the fresh mushrooms. Grate the garlic cloves and finely chop the fresh dill.
Once the chicken is cooked, remove the air fryer basket. Add the onion, carrot, red bell pepper, mushrooms, and grated garlic to the cooked chicken in the air fryer basket. Add the chopped fresh dill.
Rinse the rice thoroughly with water until the water runs clear. In a separate bowl, season the rinsed rice with salt, black pepper, smoked paprika, Italian herbs, and a drizzle of olive oil. Mix well.
Pour the seasoned rice mixture evenly over the chicken and vegetables in the air fryer basket. Add 2 cups of water, a bay leaf, and a sprig of fresh rosemary.
Place the air fryer basket back into the air fryer. Air fry at 392°F (approximately 200°C) / 200°C (approximately 390°F) for , or until the rice is cooked and the liquid is absorbed.
While the rice and vegetables are cooking, grate the Gouda cheese.
Carefully remove the hot pot from the air fryer and invert it onto a serving plate. Sprinkle generously with the grated Gouda cheese. Serve immediately and enjoy!
