One-Pot Air Fryer Chicken and Rice with Vegetables

Ingredients

  • 350 g / 12.5 oz.Chicken breast
  • 1Onion
  • 1Carrot
  • 1Red bell pepper
  • 2Fresh mushrooms
  • 2Fresh garlic cloves
  • 1 bunchFresh dill
  • 200 g / 7 oz.Rice
  • 2 cupsWater
  • 100 g / 3.5 oz.Gouda cheese

Seasonings

  • 1/2 tsp.Salt
  • 1/2 tsp.Black pepper
  • 2 tbsp.Olive oil
  • 1/2 tsp.Smoked paprika
  • 1/2 tsp.Italian herbs
  • 1Bay leaf
  • 1 sprigFresh rosemary

Step-by-Step Instructions

  1. 1.Prepare the Chicken

    Cut the chicken breast into bite-sized pieces. Season with salt, black pepper, and a drizzle of olive oil. Mix well to coat the chicken evenly.

  2. 2.Air Fry Chicken

    Place the seasoned chicken pieces in the air fryer basket. Air fry at 392°F / 200°C for 20 minutes, or until cooked through and lightly browned.

  3. 3.Prepare Vegetables

    While the chicken cooks, dice the onion, carrot, and red bell pepper. Slice and then dice the fresh mushrooms. Grate the garlic cloves and finely chop the fresh dill.

  4. 4.Combine Chicken and Vegetables

    Once the chicken is cooked, remove the air fryer basket. Add the diced onion, carrot, red bell pepper, mushrooms, and grated garlic to the cooked chicken in the air fryer basket. Add the chopped fresh dill.

  5. 5.Prepare the Rice

    Rinse the rice thoroughly with water until the water runs clear. In a separate bowl, season the rinsed rice with salt, black pepper, smoked paprika, Italian herbs, and a drizzle of olive oil. Mix well.

  6. 6.Assemble for Final Air Frying

    Pour the seasoned rice mixture evenly over the chicken and vegetables in the air fryer basket. Add 2 cups of water, a bay leaf, and a sprig of fresh rosemary.

  7. 7.Air Fry Rice and Vegetables

    Place the air fryer basket back into the air fryer. Air fry at 392°F / 200°C for 30 minutes, or until the rice is cooked and the liquid is absorbed.

  8. 8.Prepare Cheese Topping

    While the rice and vegetables are cooking, grate the Gouda cheese.

  9. 9.Serve

    Carefully remove the hot pot from the air fryer and invert it onto a serving plate. Sprinkle generously with the grated Gouda cheese. Serve immediately and enjoy!
