One-Pan Mexican Quinoa with Black Beans and Corn

  • 2 TspPaprika
  • 1 TspGround Cumin
  • 1/2 TspGround Black Pepper
  • 1/4 TspCayenne Pepper (optional)
  • 350ml / 1+1/2 cupPassata / Tomato puree
  • 2 cups / 1 canCooked Black Beans
  • 210g / 1+1/2 cupFrozen Corn
  • 300ml / 1+1/4 cupVegetable Broth
  • 20 to 30g / 1/2 to 3/4 cupCilantro (chopped)
  • 75g / 1 cupGreen Onion (chopped)
  • 65g / 1/2 cupRed Onion (diced)
  • to tasteLime Juice

Step-by-Step Instructions

  1. 1.Prepare Quinoa

    Pour 190g (1 cup) of quinoa into a bowl. Wash the quinoa a few times until the water runs clear. Then, soak it for 30 minutes.

  2. 2.Prepare Black Beans

    Drain 2 cups (1 can) of cooked black beans using a strainer. Rinse them thoroughly under running water and allow them to sit in the strainer to drain any excess water.

  3. 3.Sauté Aromatics

    Place a wide pan on the stove and turn on the heat. Add 3 tablespoons of olive oil to the pan. Once hot, add 200g (1+1/2 cup) of diced onions and 200g (1+1/2 cup) of diced red bell pepper. Season with 1/4 teaspoon of salt. Fry while switching between medium to medium-high heat until the onions and peppers start to brown, which should take about 6 to 7 minutes.

  4. 4.Add Garlic and Spices

    Add 2 tablespoons of finely chopped garlic to the pan. Fry on medium-low to low heat for about 1 to 2 minutes or until fragrant. Then, add 1 teaspoon of dried oregano, 2 teaspoons of paprika, 1 teaspoon of ground cumin, 1/2 teaspoon of ground black pepper, and an optional 1/4 teaspoon of cayenne pepper. Fry the spices on medium-low to low heat for about 1 to 2 minutes or until fragrant.

  5. 5.Thicken Tomato Puree

    Pour in 350ml (1+1/2 cup) of passata or tomato puree. Fry on medium heat to get rid of excess moisture from the puree and allow it to thicken up, which will take about 4 minutes or so.

  6. 6.Combine Ingredients

    Add the drained black beans, 210g (1+1/2 cup) of frozen corn, and the soaked and strained quinoa to the pan. Add salt to taste. Pour in 300ml (1+1/4 cup) of vegetable broth. Stir all the ingredients together until well combined.

  7. 7.Cook Quinoa Mixture

    Turn up the heat and bring the mixture to a vigorous boil. Stir occasionally to prevent the quinoa from sticking to the bottom of the pan. Once boiling, cover the pan and reduce the heat to low. Cook on low heat for about 15 minutes or until the quinoa is cooked and has absorbed the liquid.

  8. 8.Prepare Fresh Herbs and Onions

    While the quinoa is cooking, finely chop 20 to 30g (1/2 to 3/4 cup) of cilantro. Also, chop 75g (1 cup) of green onion and 65g (1/2 cup) of red onion.

  9. 9.Finish and Serve

    Once the quinoa is cooked, remove the pan from the heat. Add the chopped cilantro, green onion, and red onion. Squeeze lime juice to taste and drizzle with olive oil. Mix all the ingredients thoroughly. Serve warm and enjoy!
