  • 2 to 3 TbspOlive oil (light)
  • 1 1/2 Tbsp (18g)Garlic (finely chopped)
  • 1/2 Tsp or to tasteSalt
  • 1/4 TspChili flakes
  • 3 cupsCooked Basmati Rice

Step-by-Step Instructions

  1. 1.Prepare the rice

    With wet hands, gently break any lumps from 3 cups of cooked basmati rice. Set aside.

  2. 2.Prepare the garlic

    Separate garlic cloves from the head, peel, and finely chop them.

  3. 3.Sauté garlic and chili flakes

    Heat 2 to 3 tablespoons of light olive oil in a wok or large pan over medium heat. Add 1 1/2 tablespoons (18g) of finely chopped garlic and 1/2 teaspoon of salt (or to taste). Fry the garlic for about 30 seconds or less, stirring continuously. Then, add 1/4 teaspoon of chili flakes. Continue to fry on medium-low to low heat until the garlic turns golden brown, being careful not to burn it.

  4. 4.Add rice and fry

    Add the 3 cups of cooked basmati rice to the wok. Fry on medium to medium-high heat for about 3 minutes or so, tossing and stirring frequently to combine the rice with the garlic and chili flakes.

  5. 5.Rest and serve

    Remove the pan from heat. Cover the wok with a lid and allow the rice to rest for 2 to 3 minutes before serving to let the flavors meld.
