Heat a non-stick pan over low to medium heat. Add 1 tbsp of oil and spread it evenly across the pan's surface using a brush.
Pour one large spoon of the liquid batter into the hot pan and spread it evenly to form a round flatbread. Sprinkle some fresh chopped coriander on top. Cover the pan with a lid and cook on low to medium heat until the surface of the flatbread appears dry to the touch (approximately ).
Once the surface is dry, carefully flip the flatbread. Arrange sliced capsicum, tomato, and onion on one half of the cooked side. Sprinkle cheese slices or shredded cheese over the vegetables. Fold the other half of the flatbread over the toppings.
Garnish the top of the folded flatbread with a few more vegetable slices and cheese. Cover the pan again and cook on very low heat for until the cheese melts completely and the vegetables are slightly tender.
Remove the cooked and cheese-melted flatbread from the pan. Cut it into desired pieces (e.g., pizza slices) and serve hot. Repeat the process for any remaining batter.
