Liquid Dough Breakfast (Savory Pancakes with Veggies & Cheese)

Ingredients

For the Batter

  • 2Eggs
  • 1/2 tspCumin powder (roasted & crushed)
  • 1/2 tspCrushed coriander
  • 1 tspRed chili flakes
  • 1 tspSalt
  • 1/2 tspChaat masala
  • 1 tbspOnion (finely chopped)
  • 1 tbspGreen chilies (chopped)
  • 1 tbspCapsicum (chopped)
  • 1 tbspTomato (seedless, chopped)
  • 1/2 cupGram flour (besan)
  • 1/2 cupWheat flour
  • 1 cupWater
  • 1/4 tspCarom seeds (ajwain)

For Cooking & Topping

  • 1 tbspOil
  • for garnishCoriander (fresh, chopped)
  • as neededCapsicum (sliced)
  • as neededTomato (sliced)
  • as neededOnion (sliced)
  • as neededCheese slices (or shredded cheese)

Step-by-Step Instructions

  1. 1.Prepare the Egg Mixture

    Crack 2 eggs into a bowl. Add 1/2 tsp roasted cumin powder, 1/2 tsp crushed coriander, 1 tsp red chili flakes, 1 tsp salt, and 1/2 tsp chaat masala. Whisk well until all spices are thoroughly combined with the eggs.

  2. 2.Add Chopped Vegetables

    To the egg mixture, add 1 tbsp finely chopped onion, 1 tbsp chopped green chilies and capsicum, and 1 tbsp seedless chopped tomato. Mix all the vegetables into the egg mixture.

  3. 3.Incorporate Flours

    Add 1/2 cup gram flour (besan) and 1/2 cup wheat flour to the mixture. Stir initially without adding water to ensure the flours are partially mixed with the wet ingredients, preventing lumps.

  4. 4.Create the Liquid Batter

    Gradually add 1 cup of water to the flour and egg mixture, mixing continuously with a fork or whisk. Continue mixing until a smooth, lump-free batter with a spoon-coated consistency is achieved.

  5. 5.Add Carom Seeds

    Sprinkle 1/4 tsp of carom seeds (ajwain) into the prepared batter and mix thoroughly to distribute the flavor evenly.

  6. 6.Prepare the Pan for Cooking

    Heat a non-stick pan over low to medium heat. Add 1 tbsp of oil and spread it evenly across the pan's surface using a brush.

  7. 7.Cook the Flatbread Base

    Pour one large spoon of the liquid batter into the hot pan and spread it evenly to form a round flatbread. Sprinkle some fresh chopped coriander on top. Cover the pan with a lid and cook on low to medium heat until the surface of the flatbread appears dry to the touch (approximately 2-3 minutes).

  8. 8.Add Toppings and Fold

    Once the surface is dry, carefully flip the flatbread. Arrange sliced capsicum, tomato, and onion on one half of the cooked side. Sprinkle cheese slices or shredded cheese over the vegetables. Fold the other half of the flatbread over the toppings.

  9. 9.Melt the Cheese

    Garnish the top of the folded flatbread with a few more vegetable slices and cheese. Cover the pan again and cook on very low heat for 1-2 minutes until the cheese melts completely and the vegetables are slightly tender.

    Remove the cooked and cheese-melted flatbread from the pan. Cut it into desired pieces (e.g., pizza slices) and serve hot. Repeat the process for any remaining batter.
