Follow each step to make the recipe successfully.
Heat 2 tablespoons of cooking oil in a pan. Once hot, add 1 teaspoon of cumin seeds and let them splutter for about until fragrant.
Add 1 medium chopped onion and 1-2 chopped green chilies to the pan. for until the onions turn translucent.
Add 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala to the onions. Mix well and cook for until the raw smell of spices disappears.
Add 500g of peeled and chopped bottle gourd (lauki/doodhi) to the pan. Mix thoroughly with the spices. Then, add salt to taste and 1 medium chopped tomato. Stir everything together.
Cover the pan with a lid and let the vegetable cook on medium-low heat for , or until the bottle gourd is tender and cooked through. Stir occasionally to prevent sticking.
Once the vegetable is cooked, remove the lid and add 2 tablespoons of fresh chopped coriander leaves. Mix well and cook for another .
Serve the prepared Lauki Sabzi into a tiffin container. Fill other compartments with dal, cooked rice, sliced cucumber, and a lemon wedge. Pack rotis separately in a hot case.
