  6. Coriander Powder 1 tsp
  7. Garam Masala 1/2 tsp
  8. Bottle Gourd (Lauki/Doodhi) 500g, peeled and chopped
  9. Salt to taste
  10. Tomatoes 1 medium, chopped
  11. Fresh Coriander Leaves 2 tbsp, chopped

  3. Cucumber 1/2, sliced
  4. Lemon 1/4, wedge
  5. Roti/Chapati 2-3 pieces

  • No Onion?

    • 1 tbsp onion powder (per medium onion)
    • 3 tbsp dried minced onion
    • Shallots or leeks (1:1)

    • 1 tsp cumin + 1/2 tsp coriander + 1/4 tsp cinnamon + 1/4 tsp cardamom
  • No Cilantro?

    • Flat-leaf parsley (1:1, milder)
    • Fresh mint (in chutneys, salads)

Step-by-Step Instructions

Step 1: Temper Cumin Seeds

Heat 2 tablespoons of cooking oil in a pan. Once hot, add 1 teaspoon of cumin seeds and let them splutter for about until fragrant.

Step 2: Sauté Onions and Green Chilies

Add 1 medium chopped onion and 1-2 chopped green chilies to the pan. for until the onions turn translucent.

Step 3: Add Dry Spices

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala to the onions. Mix well and cook for until the raw smell of spices disappears.

Step 4: Add Vegetables and Seasoning

Add 500g of peeled and chopped bottle gourd (lauki/doodhi) to the pan. Mix thoroughly with the spices. Then, add salt to taste and 1 medium chopped tomato. Stir everything together.

Step 5: Cook the Vegetable

Cover the pan with a lid and let the vegetable cook on medium-low heat for , or until the bottle gourd is tender and cooked through. Stir occasionally to prevent sticking.

Step 6: Garnish with Coriander

Once the vegetable is cooked, remove the lid and add 2 tablespoons of fresh chopped coriander leaves. Mix well and cook for another .

Step 7: Assemble the Tiffin

Serve the prepared Lauki Sabzi into a tiffin container. Fill other compartments with dal, cooked rice, sliced cucumber, and a lemon wedge. Pack rotis separately in a hot case.
