Step-by-Step Instructions

Step 1: Prepare the Raw Mangoes

Take 4 raw mangoes. Cut off the ends and peel their skin using a peeler. Once peeled, carefully cut the mangoes to separate the pulp from the seed.

Step 2: Boil Mangoes with Water

Place a pan on the stove and turn on high heat. Add approximately 1.5 glasses of water to the pan. Once the water starts to boil, add the peeled and deseeded mango pieces into the pan. Let them boil until they become soft, which should not take long.

Step 3: Add Sugar and Spices

Once the mangoes are soft and the water is boiling, add just under 1 cup of sugar to the pan. Continue boiling until the sugar dissolves and the water reduces significantly, about half of its original volume. Then, add 0.5 teaspoon of roasted and crushed cumin, 0.25 teaspoon of salt, and a tip of a teaspoon of green cardamom powder. Stir gently to combine.

Step 4: Add Mint and Cool Down

Add a few fresh mint leaves to the boiling mixture. Turn off the heat and allow the mixture to cool down completely. This will allow the flavors to meld and the mixture to thicken slightly.

Step 5: Blend the Mixture

Once the mango mixture has cooled, transfer it to a blender jug. Blend until you achieve a smooth, consistent liquid. Ensure there are no large mango chunks remaining.

Step 6: Prepare the Glass for Serving

In a small plate, mix 0.5 teaspoon of red chili powder with 2 teaspoons of powdered sugar. Take a serving glass and rub a lemon slice around its rim. Then, invert the glass and dip its rim into the chili-sugar mixture to create a spiced rim.

Step 7: Assemble the Drink

Add ice cubes to the prepared glass. Optionally, add a pinch of black salt for an extra tangy flavor. Place a few fresh mint leaves into the glass. Pour 1-2 tablespoons of the blended raw mango mixture into the glass, adjusting the amount based on your desired strength. Finally, fill the rest of the glass with water and stir well.

Step 8: Garnish and Serve

Garnish the glass with a slice of lemon on the rim. Your refreshing Keri Ka Sharbat is now ready to be served and enjoyed!
