  • 2Large Onion

  • 2-3 tablespoonsCooking Oil

  • 1/2 teaspoonTurmeric Powder
  • 1/2 teaspoonChili Powder
  • 1/2 teaspoonCoriander Powder
  • 1/2 teaspoonGaram Masala
  • 1 tablespoon (chopped)Coriander Leaves

Step-by-Step Instructions

  1. 1.Prepare Ingredients

    Chop the onions finely and cut the idlis into small, bite-sized pieces. Slit the green chili.

  2. 2.Sauté Onions and Chili

    Heat 2-3 tablespoons of cooking oil in a pan. Add the chopped onions and green chili. Sauté until the onions turn translucent, about 2-3 minutes.

  3. 3.Add Idli and Salt

    Add the chopped idli pieces to the pan with the sautéed onions and chili. Add salt to taste and mix well. Continue to fry for 2-3 minutes.

  4. 4.Add Eggs and Scramble

    Crack 3 eggs directly into the pan with the idli and onion mixture. Scramble the eggs and mix them thoroughly with the idli and onions until the eggs are cooked and well combined, about 3-4 minutes.

  5. 5.Add Spices

    Add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of chili powder, 1/2 teaspoon of coriander powder, and 1/2 teaspoon of garam masala to the mixture. Mix all the spices thoroughly with the idli and egg scramble.

  6. 6.Finish and Serve

    Continue to fry for another 2-3 minutes, ensuring all ingredients are well combined and slightly crispy. Garnish with chopped coriander leaves. Serve hot.
