Ingredients

For Chicken Marination

  • 1 kgChicken mix boti
  • 1 CupDahi (Yogurt) whisked
  • ½ CupPyaz (Onion) Fried & crushed
  • 2 tbsAdrak lehsan paste (Ginger garlic paste)
  • 2 tbsHari mirch paste (Green chilli paste)
  • 1 tsp (Optional)Kacha papita (Raw papaya) paste
  • ½ tbs or to tasteIodized Himalayan pink salt
  • 1 ½ tbsDhania powder (Coriander powder)
  • 1 tspKali mirch powder (Black pepper powder)
  • 1 tspHaldi powder (Turmeric powder)
  • ½ tbsZeera powder (Cumin powder)
  • 1 tspGaram masala powder
  • 1 tspElaichi powder (Cardamom powder)
  • ¼ tspJavitri powder (Mace powder)
  • ½ tbs or to tasteLal mirch powder (Red chilli powder)
  • ¼ tspLaung powder (Cloves powder)
  • ¼ tspJaifal powder (Nutmeg powder)
  • 1 tspZeera (Cumin seeds)
  • 2Badi elaichi (Black cardamoms)
  • 2Darchini (Cinnamon sticks)

For Boiling Rice

  • 1.5 litres or as requiredBoiling water
  • 2Badiyan ka phool (Star anise)
  • ½ tspZeera (Cumin seeds)
  • 2Laung (Cloves)
  • 1Tez patta (Bay leaf)
  • 2-3 tbsIodized Himalayan pink salt
  • ½ tbsLemon juice
  • 4-5Podina (Mint leaves)
  • 3Hari mirch (Green chillies) slitted
  • 600gChawal (Rice) Sella (Washed & soaked)

For Layering and Steam Cook

  • ½ CupDalda canola oil
  • 1-2 tbsHara dhania (Fresh coriander) chopped
  • 1-2 tbsPodina (Mint leaves) chopped
  • as requiredSaffron milk (Mix 1 tsp saffron strands in ¾ Cup milk)
  • 1-2 tbsPyaz (Onion) fried
  • ¼ cupDalda VTF banaspati
  • 2 tbs or as requiredPyaz (Onion) fried

Step-by-Step Instructions

  1. 1.Marinate Chicken

    In a bowl, add chicken, yogurt, fried onion, ginger garlic paste, green chilli paste, raw papaya paste, pink salt, coriander powder, black pepper powder, turmeric powder, cumin powder, garam masala powder, green cardamom powder, mace powder, red chilli powder, cloves powder, nutmeg powder, cumin seeds, black cardamom, cinnamon & mix well. Cover & marinate for 2 hours.

  2. 2.Boil Rice

    In boiling water, add star anise, cumin seeds, cloves, bay leaf, pink salt, lemon juice, mint leaves, green chillies, mix well. Add soaked rice, mix well, boil on high flame for 3-4 minutes or until 50% done, then strain it.

  3. 3.Layering

    In a cooking pot, add canola oil, marinated chicken, fresh coriander, mint leaves, half of the parboiled rice, fresh coriander, mint leaves, half of the saffron milk, fried onion, remaining parboiled rice, banaspati, remaining saffron milk, fried onion, & cover with a kitchen cloth and lid.

  4. 4.Steam Cook

    Turn on the flame. Cook on high flame for the first 5-10 minutes to generate steam, then reduce the flame to very low (dum) for 30-40 minutes.

    Serve with salad & raita!
