Follow each step to make the recipe successfully.
In a small blender jar, add 1/2 cup yogurt, 3 green chilies, 7-8 small garlic cloves, 1 teaspoon black salt, 1/2 teaspoon black pepper, and a handful of fresh coriander with stems. Blend until a smooth green chutney is formed.
Crack 4 eggs into a bowl and them thoroughly until well combined. Heat cooking oil on a tawa (griddle). Pour the eggs onto the tawa and spread evenly. Cook until one side is set, then carefully fold the omelet. Cook until done, then remove from the tawa and cut into pieces suitable for the burger.
Dip pre-made shami kebabs (refer to the full recipe video for preparation) in the remaining egg. Place the dipped kebabs on the hot tawa with oil. Fry until golden brown on both sides, flipping as needed. Remove from tawa and set aside.
Sprinkle a little chopped coriander on the tawa. Place the burger buns, cut in half, face down on the tawa. Lightly both sides of the buns until slightly warm and golden. Remove from tawa.
Place the bottom half of a burger bun on a cutting board. Spread a generous layer of the prepared green chutney. Place two halves of a fried shami kebab on the chutney. Layer with tomato slices and cucumber slices. Add the prepared omelet on top. Drizzle mayonnaise, tomato ketchup, and chili garlic sauce. Add shredded cabbage, carrots, onion rings, and fresh mint leaves. Finally, drizzle another layer of mayonnaise and place the top bun to complete the burger.
Cut the assembled burger in half and serve immediately with extra green chutney on the side.
