  1. Prepare the Guavas

    Take 750g of fresh green guavas. Cut off the top and bottom black parts. Roughly chop the guavas into small pieces. Do not remove the seeds at this stage to avoid waste.

  2. Blend the Guavas

    Transfer the chopped guavas into a blender jar. Add approximately 1/2 cup of water, just enough to help the blender run smoothly. Blend on mode for until a smooth paste is formed.

  3. Strain the Guava Puree

    Place a fine-mesh strainer over a bowl. Pour the blended guava paste into the strainer. Use a spatula or spoon to press the puree through the strainer, separating the seeds and any fibrous bits. Add a little water to the blender jar to rinse out any remaining puree and add it to the strainer.

  4. Prepare the Halwa Base

    Heat a pan or wok over medium-high heat. Add 4 tablespoons of desi ghee and let it melt. Add 4 split green cardamom pods to the melted ghee and stir briefly. Pour in 1 cup of milk and stir gently.

  5. Add Khoa, Sugar, and Dry Milk

    Once the milk is slightly warm, add 1/2 cup of khoa (mawa) and stir until it melts and combines with the milk. Then, add 1/2 cup of sugar and 4 tablespoons of dry milk powder. Continue stirring until all ingredients are well blended and the milk starts to .

  6. Incorporate Guava Puree and Color

    When the milk mixture begins to , add the strained guava puree to the pan. Mix thoroughly until well combined. If desired, add 1-2 drops of green food color (or a pinch of powder) for an enhanced green hue. Mix continuously until the color is evenly distributed.

  7. Cook the Halwa

    Continue cooking the halwa on high flame, stirring frequently. Large bubbles will form as the water evaporates. Keep stirring until the halwa thickens and the excess water has dried out, which will take approximately . The halwa will start to come together and leave the sides of the pan.

  8. Add Dry Fruits and Finish

    Once the halwa has thickened, add chopped cashews and pistachios. Mix them into the halwa and cook for another . Turn off the heat and continue stirring for about a minute as the pan retains heat. The halwa will thicken further as it cools.

  9. Serve the Guava Halwa

    Dish out the warm guava halwa into a serving bowl. Garnish with additional cashews or your preferred dry fruits. Serve hot or at room temperature.
