Follow each step to make the recipe successfully.
Add 1 cup of sprouted green moong dal to a steamer. Cover the steamer and let it cook for about until the sprouts are nicely . Once , allow them to cool down.
Into a large bowl, add 1 cup of cooked chickpeas. Squeeze in the juice from 1 whole lemon. Add 1/2 teaspoon of sea salt and 1/2 teaspoon of roasted cumin powder. Using a fork, lightly mash the chickpeas, ensuring that some chickpeas remain intact for texture.
Add the cooled green moong dal to the mashed chickpeas. Then, add 1 finely chopped green chilli, 1/2 inch of finely chopped ginger, 10 cherry tomatoes sliced in half, 1/4 of a chopped capsicum, 1 grated medium-sized carrot, 1/2 of a sliced onion, and some fresh curry leaves. Mix all these ingredients really well to combine.
Add 1 teaspoon of freshly ground black pepper powder to the filling mixture and mix thoroughly until all ingredients are well coated.
To make the green chutney, add a small piece of ginger, 3 small peri peri green chillies (adjust quantity to your spice preference), 1/3 teaspoon of black pepper powder, and the juice of 1 whole lemon into a small chutney grinder. Add a handful of mint leaves, 2 sprigs or a large handful of fresh coriander leaves (roughly tear them before adding), 1/2 teaspoon of roasted cumin powder, and 1/2 teaspoon of sea salt. Blend all the ingredients until you achieve a smooth chutney consistency. Transfer the prepared chutney to a separate bowl.
Take two slices of sourdough bread. Spread a generous amount of the prepared green chutney on top of both bread slices. On one slice of bread, place a generous amount of the high-protein filling. Cover the filling with the other bread slice (chutney side down) and lightly press it down to secure the sandwich.
Heat a sandwich toaster (suitable for gas stove use) over medium heat. Drizzle a little wood-pressed groundnut oil (or desi ghee) onto the toaster plates. Place the assembled sandwich onto the toaster. Drizzle a little more groundnut oil on top of the bread slice. Close the toaster and both sides of the sandwich until it is golden brown and done, with visible grill marks.
Once both sides of the sandwich are nicely , remove it from the toaster and place it on a plate. Slice the sandwich diagonally just before serving for the best experience.
