Welcome to the first episode of Sweet and Spicy Channel, where we'll be making Gulab Jamun.
In a pot, add 1 cup of sugar and 1 cup of water. Let it until the sugar completely dissolves. Add 2-3 teaspoons of lemon juice to prevent crystallization and a pinch of saffron for flavor and color. Set aside.
Pour milk into a thick-based pan and bring it to a boil. Continuously stir the milk to prevent it from sticking to the bottom. Continue stirring until the milk and thickens into a solid mass. Let it cool down.

Let it cool for a few minutes, then strain the curdled milk through a muslin cloth and a strainer. Squeeze out all the excess water and keep the paneer aside.
In a large plate or bowl, combine 300 gms of Khoya/Mawa and 100 gms of Paneer. Mash them together thoroughly with your hands until the mixture is completely smooth and free of lumps. This step is crucial for smooth, crack-free Gulab Jamuns.
Add 3 tablespoons of all-purpose flour (Maida) to the mashed Khoya and Paneer mixture. Continue mashing and the dough until all ingredients are well combined and the dough is soft and pliable.
Take small portions of the dough and roll them between your palms to form smooth, crack-free balls. Ensure there are no cracks, as this can cause them to break during frying.
Pour oil into a deep pan and heat it on medium-low flame. The oil should be hot enough but not smoking; a small piece of dough dropped in should slowly rise to the surface.
Carefully drop the prepared Gulab Jamun balls into the hot oil, ensuring not to overcrowd the pan. Fry them on low heat, continuously stirring gently, until they turn a uniform golden brown color.
Once the Gulab Jamun balls are golden brown, remove them from the oil using a slotted spoon and immediately add them to the warm sugar syrup. Ensure they are fully submerged.
Cover the bowl of Gulab Jamuns in syrup and refrigerate for at least . This allows the Gulab Jamuns to absorb the syrup and become soft and juicy.
Once chilled and soaked, transfer the Gulab Jamuns to a serving bowl. Garnish with chopped dry fruits like almonds and pistachios, and edible silver paper if desired. Serve chilled.
