Gujarati Dal Dhokli

Ingredients

For Dal

  • 2 tbspOil

  • 1 cup, boiledToor Dal (pigeon pea)
  • 2.5-3 glassesWater
  • 0.5 tsp, gratedGinger
  • 0.33 cupPeanuts
  • 0.25 cupJaggery
  • 1, choppedGreen chilli
  • 1, choppedTomato
  • 2 tbsp, choppedCoriander
  • 1Lemon
  • 2 tspRed chilli powder
  • 2 tspCoriander-Cumin powder
  • 0.5 tspTurmeric powder
  • To tasteSalt

For Dhokli

  • 0.5 cupWheat flour
  • 1 tbspOil
  • 0.5 tspRed chilli powder
  • 0.5 tspCoriander-Cumin powder
  • 0.25 tspTurmeric powder
  • To tasteSalt
  • as neededWater

Step-by-Step Instructions

  1. 1.Prepare Dhokli Dough

    In a bowl, add 1/2 cup wheat flour, 1 tbsp oil, 1/2 tsp red chilli powder, 1/2 tsp coriander-cumin powder, 1/4 tsp turmeric powder, and salt to taste. Crumble the mixture well with your hands until it resembles coarse crumbs.

  2. 2.Knead the Dough

    Gradually add water and knead the mixture to form a medium-hard dough. Once kneaded, add 1/4 tsp more oil and mix well, shaping it into a smooth dough ball.

  3. 3.Rest the Dough

    Cover the dough and let it rest for 10 minutes.

  4. 4.Prepare the Dal Base

    In a bowl, add 1 cup of boiled Toor Dal (pigeon pea). Beat or blend it well until smooth. Add 2.5 to 3 glasses of water to achieve the desired consistency.

  5. 5.Temper the Dal

    Heat 2 tbsp oil in a pan. Once hot, add 1 tsp mustard seeds and let them sputter. Then add 2 dry red chillies, 3 cloves, and a 1-inch piece of cinnamon. Add 10 curry leaves and a pinch of asafoetida.

  6. 6.Add Dal and Spices

    Pour the beaten dal into the pan. Add 1 chopped tomato, 1 chopped green chilli, 1/2 tsp grated ginger, 1/3 cup peanuts, 1/4 cup jaggery, 2 tbsp chopped coriander, 2 tsp red chilli powder, 2 tsp coriander-cumin powder, 1/2 tsp turmeric powder, and salt to taste. Mix everything well and bring the dal to a boil.

  7. 7.Roll and Cut Dhokli

    While the dal is boiling, take the rested dhokli dough and divide it into 4 equal portions. Take one portion, flatten it, and roll it out using dry flour into a thin, even circle (not too thick, not too thin). Cut the rolled dough into squares or diamond shapes using a pizza cutter or knife. Re-knead and roll any remaining dough scraps to make more dhokli pieces.

  8. 8.Cook Dhokli in Dal

    Add the prepared dhokli pieces to the boiling dal. Cook for 10-12 minutes, or until the dhokli pieces are thick and cooked through.

  9. 9.Finish and Serve

    Switch off the flame and add the juice of 1 lemon. Mix well. Serve the hot Gujarati Dal Dhokli with Bhakhri, rice, or paratha, garnished with fresh coriander.
