  • 1 TspGinger Garlic Paste
  • 1/2 LemonLemon Juice
  • 1 TspCorn Flour
  • 1 TbspOil
  • LittleWater

For Frying

  • 2 TbspOil
  • 2-3 TbspCurry Leaves

Step-by-Step Instructions

  1. 1.Prepare Fish

Take 1/2 Kg of fish pieces (8-9 pieces). Wash them thoroughly. Finally, rub with a little salt and lemon juice, let it sit for 2 minutes, then wash again with water. Ensure fish pieces are of medium thickness.

  2. 2.Prepare Fish Fry Masala Paste

In a small bowl, add 2 Tsp Red Chilli Powder, 1 & 1/4 Tsp Salt, 1/4 Tsp Turmeric Powder, 1 Tsp Coriander Powder, 1/2 Tsp Cumin Powder, 1/4 Tsp Garam Masala Powder, 1/4 Tsp Pepper Powder, 1 Tsp Ginger Garlic Paste, juice of 1/2 lemon, 1 Tsp Corn Flour, and 1 Tbsp Oil. Add a little water and mix well to form a thick paste. The consistency should be as shown in the video. Taste and adjust salt/spice if needed.

  3. 3.Marinate and Freeze Fish

Apply the prepared masala paste generously to all fish pieces, ensuring it coats both sides and penetrates any cuts. Place the marinated fish on a plate and put it in the deep freezer for 1 hour. If short on time, freeze for at least 30 minutes. For longer storage (up to 1 week), freeze until hard, then transfer to an airtight container.

  4. 4.Fry Fish - First Batch

Heat a non-stick pan on medium flame. Add 2 Tbsp of oil and spread it evenly. Once the oil is slightly hot, place 3-4 marinated fish pieces in the pan. Fry on medium flame until golden brown and crispy on one side. Carefully turn the fish pieces using tongs and a spoon to avoid breaking them. Fry until crispy and golden brown on the other side as well.

  5. 5.Drain Excess Oil

Once the fish pieces are fried and crispy, turn the flame to low. Stack the fried fish pieces one on top of the other in the center of the pan. This helps drain any excess oil from the fish. Transfer the fried fish to a plate lined with tissue paper to absorb more oil.

  6. 6.Fry Fish - Subsequent Batches with Curry Leaf Flavor

Remove any excess masala residue from the oil in the pan. Add 2-3 Tbsp of curry leaves to the remaining oil and fry on low flame until fragrant. This infuses the oil with curry leaf flavor. Remove the curry leaves. Now, place the remaining marinated fish pieces in the flavored oil and fry them following the same process as the first batch (medium flame, turning carefully, frying until golden brown and crispy). Transfer to a tissue-lined plate.

  7. 7.Serve Hot

Serve the crispy and flavorful fish fry hot, garnished with onion rings and lemon wedges.
