Eggplant with Tamarind

Ingredients

  • 1 large (cut into 6-8 pieces)Eggplant
  • 3-4 tbspMustard oil
  • 1/2 tsp (plus extra for eggplant)Turmeric powder
  • 1 tsp (or to taste, plus extra for eggplant)Salt
  • 1 tspCumin seeds
  • 3 small (finely chopped)Onion
  • 1 tspCumin powder
  • 1/2 tspRed chili powder
  • 1/4 cupWater
  • 3 tspTamarind pulp

Step-by-Step Instructions

  1. 1.Prepare Eggplant

    Cut the eggplant into large pieces. Season them with a pinch of turmeric powder and salt.

  2. 2.Fry Eggplant

    Heat 3-4 tablespoons of mustard oil in a pan. Once hot, add the seasoned eggplant pieces and fry them until they are lightly golden brown on all sides. Do not over-fry to prevent them from breaking apart later. Remove the fried eggplant and set aside.

  3. 3.Sauté Spices and Onions

    In the same pan with the remaining oil, add 1 teaspoon of cumin seeds. Let them splutter for a few seconds. Then, add 3 small finely chopped onions and sauté until they turn translucent and lightly browned.

  4. 4.Add Dry Spices

    Add 1/2 teaspoon of turmeric powder, 1 teaspoon of salt (or to taste), 1 teaspoon of cumin powder, and 1/2 teaspoon of red chili powder to the sautéed onions. Mix well.

  5. 5.Cook Masala

    Add about 1/4 cup of water to the spices and onions. Stir and cook for 2-3 minutes until the mixture forms a thick masala and the oil starts to separate.

  6. 6.Combine with Eggplant and Tamarind

    Return the fried eggplant pieces to the pan with the cooked masala. Gently mix to coat the eggplant. Then, add 3 teaspoons of tamarind pulp (ensure seeds are removed). Mix again carefully.

  7. 7.Simmer and Serve

    Allow the dish to simmer for a few minutes, letting the flavors meld. Once the gravy thickens slightly and the eggplant is tender, it's ready to serve. Transfer to a serving bowl.
