  7. Raisins 2 tbsp
  8. Apricot (chopped) 4 pieces
  9. Sunflower seeds 2 tbsp
  10. Poppy seeds 1 tbsp
  11. Dry coconut (grated) 2 tbsp

Step-by-Step Instructions

Step 1: Prepare Anjeer and Dates Mixture

Take 250 grams of anjeer (dried figs) and 250 grams of pitted dates. Add them to a mixer grinder and until a coarse mixture is formed. The mixture should be slightly sticky.

Step 2: Cook Anjeer and Dates Paste

Heat 2 tablespoons of ghee in a pan. Add the anjeer and dates mixture to the pan. Cook on medium flame, stirring continuously, until the mixture softens, turns glossy, and forms a silky paste-like texture. This should take about .

Step 3: Roast Nuts and Dry Fruits

In a separate pan, heat another 2 tablespoons of ghee. Add 1/2 cup chopped cashews, 1/2 cup chopped almonds, and 1/2 cup chopped walnuts. Roast them on low flame until they turn slightly crunchy. Then, add 2 tablespoons pistachios, 2 tablespoons chopped anjeer, 2 tablespoons raisins, 4 chopped apricots, and 2 tablespoons sunflower seeds. To the roasted nuts and dry fruits, add 1 tablespoon of poppy seeds and 2 tablespoons of grated dry coconut. Continue to roast on low flame for another minute until the poppy seeds and coconut are lightly and aromatic.

Step 5: Combine Mixtures and Add Flavoring

Transfer the roasted nuts and dry fruits mixture into the pan with the cooked anjeer and dates paste. Add 1/2 teaspoon of cardamom powder. Mix all the ingredients thoroughly until everything is well combined and evenly distributed.

Step 6: Shape the Anjeer Roll

Allow the mixture to cool slightly so it's comfortable to handle. Take a portion of the mixture and shape it into a tight ball. Then, on a clean wooden board, roll the mixture into a cylindrical shape.

Step 7: Coat and Rest the Roll

Spread some pistachios and poppy seeds on a piece of parchment paper. Roll the prepared anjeer cylinder over the nuts and seeds to coat it evenly. Wrap the roll tightly in the parchment paper and for at least to set.
