Follow each step to make the recipe successfully.
In a large bowl, combine 3 cups of raw rice, 1 cup of black gram (urad dal), 1/4th cup of Bengal gram (chana dal), and 1 tsp of fenugreek seeds. Mix them well and wash 2-3 times. Add enough water to cover the ingredients and soak for .
After , drain the water from the soaked rice and dals. Transfer them into a mixer jar in batches. Add a little water and blend until you get a smooth batter. Separately, soak 1 cup of rice flakes for 1/, then transfer them to a mixer jar, add a little water, and blend into a smooth paste.
Combine both blended mixtures in a large bowl. Mix well until thoroughly combined. Cover the bowl and let it ferment for . The batter should become fluffy after fermentation. You can store the fermented batter in the fridge for 4-5 days.
When ready to make dosa, mix the fermented batter well. Scoop the required amount of batter into a separate bowl. Add 1/2 tsp of salt (or as per taste) and water if required to achieve a pourable consistency. Mix well.
In a mixer jar, add 1/4th cup of grated dry coconut, 1 inch cinnamon stick, 2 cardamoms, 5-6 cloves, 2 tsp coriander seeds, 1 tsp cumin, and 2 tsp poppy seeds. Add a little water and blend all ingredients into a smooth paste. Keep this paste aside.
Heat 3 tsp of oil in a large pot or pan. Add 3 finely chopped onions and 3-4 slitted green chillies. and cook for until the onions turn translucent and slightly golden.
Add 2 tsp of ginger garlic paste to the onions and green chillies. for until the raw smell disappears. Then, add 750 gms of chicken pieces to the pot. Mix well to coat the chicken with the onion mixture.
Add 1/2 tsp of turmeric and 1.5 tsp of salt (as per taste) to the chicken. Mix well. Cover the pot and cook for , allowing the chicken to release its juices.
After , uncover the pot and add 2 tsp of red chilli powder. Mix well to incorporate the spice. Add 2 cups of water, mix again, cover the pot, and cook for .
Uncover the pot and add the blended coconut paste. Mix well. Add more water as required to achieve your desired curry consistency. Cover the pot and cook for another until the chicken is tender and the curry thickens. Finally, add 3 tsp of chopped coriander leaves, mix well, cover, and cook for .
Heat a dosa tawa (griddle). Pour a ladleful of dosa batter onto the hot tawa and spread it in a circular motion to form a thin dosa. Drizzle 1 tsp of oil around the edges. Roast until the dosa turns golden brown and crispy. Flip the dosa and roast for a few more seconds on the other side. Fold and remove from the tawa.
Serve the hot and crispy Dosa with the flavorful Chicken Curry.
