Place 500g of boneless chicken thigh pieces into a mixing bowl. Prepare your spices: 1 tsp crushed coriander, 1½ tsp crushed cumin, 1 tsp salt, 1½ tsp baking soda, 1 tsp black pepper, 1 tsp red chili powder, and 1 tsp turmeric powder.

Heat sufficient oil for deep frying in a pan over medium-high heat. Once the oil is hot, carefully place the chicken pieces into the oil, ensuring not to overcrowd the pan. Fry the chicken until it turns golden brown and is cooked through, approximately per batch.
Remove the fried chicken pieces from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Garnish with fresh parsley or chopped green onions and serve hot with ketchup or your favorite dipping sauce.
