  • 1½ tspCumin Crushed
  • 1 tspSalt
  • 1½ tspBaking Soda
  • 1 tspBlack Pepper
  • 1 tspRed Chili Powder
  • 1 tspTurmeric Powder
  • 1 tspGreen Chilli Paste
  • 1 tspGinger Garlic Paste
  • 1 tbspLemon Juice
  • 1Egg
  • 2 tspCornflour
  • 2 tspAll-Purpose Flour
  • 1 tbspSesame Seeds
  • Sufficient for deep fryingOil

Step-by-Step Instructions

  1. 1.Prepare Chicken and Spices

    Place 500g of boneless chicken thigh pieces into a mixing bowl. Prepare your spices: 1 tsp crushed coriander, 1½ tsp crushed cumin, 1 tsp salt, 1½ tsp baking soda, 1 tsp black pepper, 1 tsp red chili powder, and 1 tsp turmeric powder.

    Add all the prepared spices (crushed coriander, crushed cumin, salt, baking soda, black pepper, red chili powder, and turmeric powder) to the chicken pieces in the bowl. Then, add 1 tsp green chili paste, 1 tsp ginger garlic paste, 1 tbsp lemon juice, and 1 egg. Mix thoroughly until all chicken pieces are well coated with the marinade. Let it marinate for at least 30 minutes.

  3. 3.Add Flours and Sesame Seeds

    After marination, add 2 tsp cornflour and 2 tsp all-purpose flour to the chicken mixture. Mix well to ensure an even coating. Finally, add 1 tbsp of sesame seeds and mix them into the chicken.

    Heat sufficient oil for deep frying in a pan over medium-high heat. Once the oil is hot, carefully place the marinated chicken pieces into the oil, ensuring not to overcrowd the pan. Fry the chicken until it turns golden brown and is cooked through, approximately 5-7 minutes per batch.

    Remove the fried chicken pieces from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Garnish with fresh parsley or chopped green onions and serve hot with ketchup or your favorite dipping sauce.
