In a mixer grinder, combine 2 tbsp mustard seeds, 1/2 tbsp cumin seeds, 1/2 tbsp coriander seeds, 8 black peppers, 2 green chillies, 1/2 inch ginger, 14 garlic cloves, 1/2 tsp turmeric powder, and 6 tbsp water. Blend all ingredients into a fine paste.
Take 500 grams of cleaned Rohu/Catla fish in a bowl. Add 1 tsp red chilli powder, 1/2 tsp garam masala, salt to taste, and the prepared masala paste. Mix everything thoroughly, preferably with your hands, to ensure each fish piece is well coated with the marinade. You can for or cook immediately.
Heat 4 tbsp of mustard oil (or your preferred cooking oil) in a frying pan over medium flame. If using mustard oil, heat until it starts smoking to remove its raw, pungent flavor.
Carefully place the fish pieces one by one into the hot oil. Cover the pan with a lid to prevent oil splatters and cook for on one side until it turns golden brown.
Flip the fish pieces to the other side using a spoon and a spatula. Cover the pan again and continue cooking on medium flame, flipping occasionally, until the fish is properly cooked through and has a nice golden-brown crust on both sides. The total cooking time will be approximately .
Once the fish is cooked, turn off the flame. Transfer the Fish Masala Fry to a serving plate. Serve hot with green chutney, a fresh salad (like carrots, radishes, and onions), and a wedge of lime.
