Curry Goat - Jamaican Style

Ingredients

For Marinade

  • 3-3.5 lbsGoat meat
  • 3-4 stalksGreen onions
  • 1 wholeWhite onion
  • 1/2Red bell pepper
  • 1/2Orange bell pepper
  • 1/2Green bell pepper
  • 4-5 sprigsFresh thyme
  • 2 stalksCelery
  • 5-6 clovesGarlic
  • 2 tsp (grated)Fresh ginger
  • 1 (deseeded, diced)Scotch bonnet pepper
  • 1 tspCrushed red pepper flakes
  • 1 tspGround allspice
  • 1 tbspWhole allspice
  • 1 tbspJamaican seasoning
  • 1 tbspGarlic powder
  • to tasteOnion powder
  • 1-1.5 tspSalt
  • to tasteCrushed black pepper
  • 1-1.5 tspSmoked paprika
  • to tasteSoul seasoning (no salt)
  • 3Bay leaves
  • 2 tbspBetapac curry powder
  • 1 tbspWorcestershire sauce

For Cooking

  • 3 (diced)Russet potatoes
  • 2 (sliced)Carrots
  • 1 tbspBeef fat
  • 1/3 cupAvocado oil
  • 2 tbspBetapac curry powder
  • 3 cupsHot water
  • a few pieces (chopped)White onion
  • 2-3 cloves (whole)Garlic
  • a few stalks (whole)Green onions
  • a few sprigs (whole)Fresh thyme
  • 2 tbspButter

Step-by-Step Instructions

  1. 1.Prepare the Goat Meat

    Clean and cut 3-3.5 lbs of goat meat into desired pieces. Pat dry with paper towels.

  2. 2.Chop Vegetables for Marinade

    Chop 3-4 green onions, 1 whole white onion, 1/2 red, 1/2 orange, and 1/2 green bell peppers. Roughly chop 4-5 sprigs of fresh thyme and 2 stalks of celery. Finely chop 5-6 cloves of garlic. Grate about 2 teaspoons of fresh ginger. Deseed and dice one Scotch bonnet pepper.

  3. 3.Season the Goat Meat

    Add all the chopped vegetables, garlic, ginger, and Scotch bonnet pepper to the goat meat in a large bowl. Add 1 tsp crushed red pepper flakes, 1 tsp ground allspice, 1 tbsp whole allspice, 1 tbsp Jamaican seasoning, 1 tbsp garlic powder, onion powder to taste, 1-1.5 tsp salt, crushed black pepper to taste, 1-1.5 tsp smoked paprika, soul seasoning to taste, 3 bay leaves, 2 tbsp Betapac curry powder, and 1 tbsp Worcestershire sauce. Mix thoroughly with gloved hands until the meat is well coated with all the seasonings and vegetables.

  4. 4.Marinate the Goat Meat

    Cover the bowl and let the goat meat marinate for at least 2 hours. For best results, marinate overnight in the refrigerator.

  5. 5.Prepare Potatoes and Carrots

    Dice 3 russet potatoes into quarters and slice 2 carrots into thin rounds. Place them in cold water to prevent browning until ready to use.

  6. 6.Toast Curry Powder

    In a large pot, add 1 tbsp beef fat and 1/3 cup avocado oil. Heat over medium-high heat. Once hot, add 2 tbsp Betapac curry powder and toast for about 2 minutes, stirring constantly, until fragrant and the raw flavor is cooked out.

  7. 7.Sear the Goat Meat

    Add the marinated goat meat to the pot with the toasted curry powder. Stir to combine. Cover the pot and let it cook for 30 minutes, allowing the meat to release its own juices.

  8. 8.Add Liquid and Simmer

    After 30 minutes, the meat will have produced some liquid. Add 3 cups of hot/boiling water to the pot. Stir well. Cover the pot and let it simmer for 2 hours, or until the goat meat is almost tender.

  9. 9.Add Vegetables and Final Seasonings

    After 2 hours, add the diced potatoes and sliced carrots to the pot. Add a few more chopped white onions, 2-3 whole garlic cloves, a few whole green onions, and a few sprigs of fresh thyme. Stir in 2 tbsp of butter. Cover the pot and continue to cook for another 30 minutes, or until the vegetables are tender and the gravy has thickened.

  10. 10.Rest and Serve

    Once cooked, turn off the heat and let the curry goat rest, covered, for about 15 minutes. Serve hot with peas and rice, fried cabbage, and fried plantains.
