Step-by-Step Instructions

  1. 1.Prepare the Onions

    Peel and cut 1 kg of medium-sized onions. Slice them thinly as much as you can, trying to make even slices. This helps the onion slices fry evenly. You can slice the onions lengthwise as well. Separate the onion slices.

  2. 2.Heat the Oil

    Pour sufficient oil into a pan for deep frying. Heat the oil until it's ready to fry (a small piece of onion sizzles immediately when dropped in).

  3. 3.Fry the First Batch of Onions

    Carefully add a portion of the separated onion slices to the hot oil. Stir continuously for 10-12 minutes on medium heat.

  4. 4.Achieve Golden Brown Crispiness

    When the onions start changing color to light golden, set the flame to low. Continue frying for approximately 1 minute on lower heat until they turn light brown. They will continue to cook with the residual heat after being removed, getting darker.

  5. 5.Drain and Season

    Using a slotted spoon, remove the fried onions from the oil and spread them on a kitchen tissue to absorb any excess oil. While still warm, sprinkle a pinch of sugar over them; this helps to keep them crispier for a longer period of time.

  6. 6.Fry Remaining Onions

    Repeat the frying process for the rest of the sliced onions, following steps 3-5, ensuring each batch is fried to a light golden brown and drained properly.

  7. 7.Utilize Flavored Oil

    The oil used for frying the onions is extremely flavorful. Do not discard it; you can use this oil in cooking dishes like biryani, bhuna, and curry to add a rich onion flavor.
