Creamy White Sauce Pasta – Restaurant Style

Ingredients

For Boiling Pasta

  • 4 cups / 1 litreWater
  • 1/4 tspSalt
  • 1/2 tspOil
  • 1 cupPasta (penne or any desired shape)

For Vegetable Sauté

  • 2 tspOil
  • 1 tbspGarlic, finely chopped
  • 1Small onion, finely chopped
  • 1Medium sized capsicum, diced
  • 2 tbspSweet corn kernels, boiled
  • 1 tspParsley, finely chopped
  • 1/2 tspBlack pepper powder
  • A littleSalt

For White Sauce

  • 2 tbspButter
  • 2 tbspWheat flour / All-purpose flour
  • 2 cupsMilk, boiled and cooled to room temperature
  • According to tasteSalt
  • 1/4 tsp, or as requiredBlack pepper powder
  • 1/2 tspOregano / Mixed herbs
  • 1/2 tsp, or to tasteRed chilli flakes
  • 1/4 cupReserved pasta water

Step-by-Step Instructions

  1. 1.Boil Pasta

    Bring 4 cups (1 litre) of water to a boil in a pot. Once boiling, add 1/4 tsp salt and 1/2 tsp oil. Then, add 1 cup of pasta (penne or your desired shape). Cook the pasta for 7-8 minutes on medium flame until it floats on top and is cooked 90% (al dente).

  2. 2.Drain and Rinse Pasta

    Remove the cooked pasta from the flame and drain the water. Reserve about 1/4 cup of the pasta water for later use. Rinse the drained pasta with cold water and set aside.

  3. 3.Sauté Vegetables

    Heat 2 tsp oil in a pan. Add 1 tbsp finely chopped garlic and sauté until aromatic. Then, add 1 small finely chopped onion and sauté until it becomes translucent. Add 1 medium-sized diced capsicum and 2 tbsp boiled sweet corn kernels. Fry the vegetables for 2 minutes on low flame, stirring continuously. Add 1 tsp finely chopped parsley, 1/2 tsp black pepper powder, and a little salt. Mix well and cook for 1 minute. Remove the sautéed vegetable mixture from the flame and set aside.

  4. 4.Prepare White Sauce Base

    In the same pan, melt 2 tbsp butter. Add 2 tbsp wheat flour (or all-purpose flour). Roast the flour on low flame, stirring continuously, until it becomes aromatic, golden, and fluffy. Ensure it does not darken.

  5. 5.Make the Sauce Creamy

    Gradually add 2 cups of boiled and cooled milk to the roasted flour, stirring continuously to create a lump-free, smooth, and silky mixture. Continue stirring until the sauce thickens and begins to bubble.

  6. 6.Season and Combine

    Once the sauce is thick and bubbling, add salt according to taste, 1/4 tsp black pepper powder (or as required), 1/2 tsp oregano/mixed herbs, and 1/2 tsp red chilli flakes (or to taste). Add the sautéed vegetable mix to the sauce. Mix everything well and cook for 2 minutes on low flame until all ingredients are well incorporated.

  7. 7.Add Pasta and Finish

    Add the boiled pasta to the white sauce. Pour in the 1/4 cup of reserved pasta water. Gently mix the pasta with the sauce. Cook on low flame for 3-4 minutes until the pasta reaches your desired consistency and the sauce is thick and creamy.

  8. 8.Serve

    Serve the creamy white sauce pasta hot. You can optionally sprinkle some extra oregano and red chilli flakes on top before serving.
