Ingredients

For Chicken Marinade

  • 400gBoneless chicken
  • 1-2 tbspOlive oil
  • 1 tsp or to tasteSalt
  • 1 tspOregano
  • 1 tspGarlic powder
  • 1 tspPaprika powder
  • 1 tspOnion powder
  • 1.5 tspRed Chilli flakes
  • 1-2 tbspLemon juice

For Potatoes

  • 3Medium size potatoes
  • 1-2 tbspOlive oil
  • 1 tsp or to tasteSalt
  • 1 tspOregano
  • 1 tspGarlic powder
  • 0.5 tspBlack pepper powder

For Creamy Sauce & Topping

  • 1 tbspOlive oil
  • 180mlFresh Cream
  • 100mlMilk
  • 150gMozzarella Cheese grated
  • 1 tbspFresh coriander chopped
  • 0.5 tspRed Chilli flakes

Step-by-Step Instructions

  1. 1.Marinate the Chicken

    Add 400g boneless chicken pieces to a bowl. Drizzle with 1-2 tbsp olive oil, then add 1 tsp salt (or to taste), 1 tsp oregano, 1 tsp garlic powder, 1 tsp paprika powder, 1 tsp onion powder, 1.5 tsp red chili flakes, and 1-2 tbsp lemon juice. Mix all ingredients thoroughly until the chicken is well coated. Cover the bowl and let it marinate for 30-40 minutes.

  2. 2.Prepare and Boil Potatoes

    Peel 3 medium-sized potatoes and cut them into small, even cubes. Bring a pot of water to a boil and add the chopped potatoes. Boil the potatoes for 6-8 minutes until they are tender but still hold their shape.

  3. 3.Season and Roast Potatoes

    Drain the boiled potatoes and transfer them to a bowl. Drizzle with 1-2 tbsp olive oil, add 1 tsp salt (or to taste), 1 tsp oregano, 1 tsp garlic powder, and 0.5 tsp black pepper powder. Mix well to coat the potatoes evenly. Heat a pan with a little oil (if needed, as some oil is already on potatoes) and add the seasoned potatoes. Roast them for 6-8 minutes, stirring occasionally, until they are golden brown and slightly crispy. Remove the roasted potatoes from the pan and set aside.

  4. 4.Cook Marinated Chicken

    In the same pan, add 1 tbsp olive oil. Add the marinated chicken pieces to the hot pan. Stir and cook the chicken for a few minutes until it starts to brown. Cover the pan with a lid and cook for 8-10 minutes, allowing the chicken to cook through and become tender.

  5. 5.Combine Chicken and Potatoes

    Once the chicken is cooked, add the previously roasted potatoes to the pan with the chicken. Mix well to combine the chicken and potatoes.

  6. 6.Add Cream and Milk

    Pour 180ml fresh cream and 100ml milk into the pan with the chicken and potatoes. Mix thoroughly until all ingredients are well coated in the creamy sauce.

  7. 7.Add Cheese and Cook

    Sprinkle a generous amount of grated mozzarella cheese over the chicken and potato mixture. Garnish with chopped fresh coriander and a sprinkle of red chili flakes. Cover the pan and cook for 4-5 minutes, or until the cheese is completely melted and bubbly.

  8. 8.Serve

    Once the cheese is melted and the dish is hot and bubbly, remove from heat. Serve immediately with garlic bread or your preferred accompaniment.
